
As I mentioned in my last post, my favourite day of the year is very quickly approaching. That’s Pancake Day for anyone not in the loop. As I also said in my last post, I have a lot of vegan pancake recipes. So, I thought with that ever so special day on the horizon, I’d put them all in one place for you. Some are sweeter than others, some are healthy, one is savoury and some are so sweet they’re basically a pure dessert that I insist on eating for breakfast. My point is, there’s probably something for everyone here, so I hope you find one you like the look of.
I thought about doing this list in chronological order from when they were posted, but I decided to opt for categories based on how healthy they are instead so it’s easier to filter depending on how much of a sweet tooth you have.

Savoury Pancake Recipe(s)
Falafel/ Chickpea Pancakes Recipe
A couple of years ago I decided to do a post that included a pancake dish for every meal, and made these falafel inspired ones for dinner. Made with chickpea flour and the seasoning I’d typically use in falafel.

Healthy Pancake Recipes
Now, these are still sweet, but they contain something healthier. Bananas, avocadoes, quinoa…
Now this one looks like it’s going to be awfully bad for you, but it’s simply banana, oats and a little cocoa so they’re not too bad at all.

Obviously, you can make these without the choc chips to make them healthier, but these are a simple banana, oats and almond milk combination. It’s basically as healthy as your morning oatmeal…

My most recent pancake recipe contains avocado as a source of healthy fats to keep the dish balanced. Great for those who don’t like banana (me).

Not exactly seasonally appropriate any more, but these ones contain homemade pumpkin puree and a date based caramel sauce.

This one is a basic pancake recipe, but they contain quinoa to add a little protein and make the dish more balanced.

Regular Pancake Recipes
Now, this section is for the not deliberately healthy but not a pure dessert recipe either kind of pancakes. More of a regular Sunday brunch/ treat breakfast recipe
For Wimbledon last year, I made a series of strawberries and cream recipes, and that included these. Made with fresh strawberries and some vanilla soy milk for that creamy sweetness.

So, I was really disappointed that my strawberry pancakes weren’t pink and decided I would make some more with a deeper coloured fruit to try and make them change colour. Look how blue these ones are! It was a proud moment…

One of my Pancake Day recipes from last year, these ones contain fresh orange juice and some soy cream.

Traditional Weekend Brunch Pancakes
…This was the first cooked recipe that I ever posted. Seems like the pancake recipe theme started very early on. This recipe uses buckwheat flour, and I still use this exact recipe ratio when I’m making plain pancakes now. Sometimes I stick with this recipe and use buckwheat, sometimes I use oat flour for a more neutral taste.

Okay, this one sounds like a dessert option, but it’s simply an oat and almond flour pancake. I topped mine with chocolate to make it more indulgent, but could be healthier without.

Cinnamon apple pancakes, applesauce, almond milk, oat & self raising flour. Sweet but not overly indulgent either.

Dessert Pancakes
I’m putting it out there right now, this is one of my favourite recipes I’ve ever made. That’s out of all recipes, not just pancakes. Super sweet, not at all good for you. But definitely worth it.

I made these for my birthday last year, which is why they’re covered in ice cream. But triple chocolate is as rich as it sounds.

This one was for Christmas last year, it’s probably the healthiest on in this section of the post, but equally as delicious. Made with oats and non-dairy chocolate milk and served with an orange cashew cream recipe.

My mom makes these oats and banana pancakes that are sooo good. Though I admit my favorite pancakes are my own, made with a bit of cinnamon and cardamon. Delicious.

Those peanut chocolate chip pancakes look so fluffy and delicious I’ve not been able to master fluffy pancakes yet, I always end up making my batter too thin and make crepes instead I’d love to try those ones out on Tuesday!

I’m a huge fan and I just appreciate so much how you included healthier options like the ones with extra protein. I’ve been trying to increase my protein but without depriving myself. I literally liked all the recipes and I’m not vegan! One flavor that stood out to me was the apple pie one. I ever thought adding applesauce to pancakes, genius!

I’ve cheated this year and bought the ready-made vegan pancakes from Waitrose to take into my office but may have to make some “real” ones next weekend.
I haven’t had pancakes in ages but I have been looking for some good vegan pancake recipes and these all look delicious. I will have to try some of these this week.

Pancakes are one of my favourites! I’ve only ever tried vegan pancakes a few times and they were always really good but I’ve never tried to make them myself, maybe I should give it a try! X
These all look absolutely delicious and very tempting. I’ve been gradually creating more and more vegan meals and have fairly recently discovered chickpea (gram) flour and it’s awesome as a replacement for egg, cheese, cream and of course it’s gluten-free as well. Always glad to have more recipe ideas to try, thanks for sharing.

It’s 3 pm here in California, and I still haven’t had any pancakes yet!! I think when I get home I’ll whip up some using an oat flour base, will definitely have to refer to this beast of a roundup hehe x
