
Hello everyone and welcome to my favourite post of the year. The glorious day that is pancake day is just around the corner. And it’s my favourite day of the year. The excitement that people feel going into Christmas, eating all the food and enjoying the indulgence? That’s how I feel about pancake day. Of course, it doesn’t have to be pancake day to enjoy pancakes. But knowing almost everyone in the country is tucking into some makes me very happy. Last year for pancake day I created 3 recipes, one for every meal. I made everything from banana chocolate pancakes to a savoury falafel pancake. This year, I wanted to go all out and create something totally decadent. I settled for peanut choc chip pancakes, served with butterscotch syrup, slathered in melted chocolate and a side of peanut butter cookie Ben & Jerry’s.


I’m so proud of how well these ones turned out, but I have a few important notes about the texture. 1. I used the powdered peanut butter in this recipe for a specific reason. If you simply used ground nuts or peanut butter, the fat content would be too high and the pancakes would be too dense. You won’t get that lovely fluffy stack. I know it’s not an ingredient everyone has in their cupboards but I strongly advise not trying to sub it for something else. 2. Speaking of fat content, be very careful measuring the oil. When I was working on this recipe, I accidentally added an extra ¼ tbsp to one batch and they were completely ruined.
This recipe is vegan, gluten free, dairy free and can be soy free. I used vanilla soy milk to make this recipe sweeter and creamier, like real cookie dough. But you could easily switch the milk out if necessary.

Peanut Choc Chip Pancakes
This recipe is vegan, gluten free, dairy free and can be soy free.
Ingredients
- ½ cup GF oat flour
- 1 heaped tsp baking powder
- 1 ½ tbsp powdered peanut butter
- ½ tbsp brown sugar
- ½ tbsp sunflower oil
- ½ cup vanilla soy milk
- Approximately 20g chocolate chips/ chunks
To serve:
- Butterscotch syrup
- 15 g chocolate
- Ice cream
Instructions

Add oat flour, sugar, baking powder and powdered PB to a medium to large mixing bowl and whisk to combine.

Measure out vanilla soy milk in a large liquid measuring cup, then add oil and whisk to combine.

Add wet ingredients a little at a time to the dry ingredients and gently, slowly stir until just combined. You may not use all of the liquid. Then stir in the chocolate chips.

Preheat a non-stick frying pan over medium/medium-low heat. You want it warm but not hot. Oil should not smoke when added to the pan.

Once hot, drizzle the surface with oil (if necessary for your pan) but wipe away any surface excess with a paper towel. You don’t want any pools of oil, just a light grease.

Then pour a small amount of mix into the pan. Cook until bubbles appear and the sides are beginning to dry - about 3-4 minutes. Cook for another 2-4 more minutes on the other side.

While the pancakes are cooking, microwave the chocolate to serve with for around 45 seconds until melted. Set aside until pancakes are finished. This is a personal preference, but I removed my ice cream from the freezer at this point too so it wasn’t too hard to serve.

Once all pancakes are cooked, stack them up, drizzle with syrup and the melted chocolate and add ice cream to your plate before serving.
Serve and enjoy!

They sound delicious! I am a huge fan of pancakes and try to have them every weekend when I have the time to cook them. Peanut butter is a favourite of mine so these are perfect for upcoming pancake day! I’ve never tried powdered peanut butter but I’ll give it a go if it works for these. Great post x

Oh my LORD, my mouth is watering. I’ll be honest, I literally never eat pancakes. I don’t think I even made them on pancake day last year! It’s not that I don’t like them it’s just I feel like they’re quite a lot of effort when I enjoy other things much more. I would definitely devour these if they were put infront of me though, they look and sound absolutely divine!

Honestly I don’t usually rate pancakes that much, I find them slightly disappointing, but these look INCREDIBLE. I am a huge peanut and chocolate fan, so I actually need to track down some powdered peanut butter and give these a go. Your photos are incredible – honestly look like something out of a recipe book!
