
Pancakes, a delight enjoyed by the masses, usually on weekends. I love pancakes, and every time I post a pancake recipe, Iโm hit with a whopping sense of nostalgia. My OG pancake recipe was the first recipe I ever postedโฆ and that delightful mix has been the golden ratio for every pancake recipe that Iโve produced since. The flours and flavours get adapted a lot.ย But not a single pancake is made in my house without a nod to that post. This Wimbledon inspired strawberry pancakes recipe is inspired by both the OG recipe and the orange pancake recipe I made for pancake day this year. ย
Ingredient Choicesย
As Iโm sure youโre aware by now, Wimbledon is my favourite time of year. And my blog is paying tribute to that this year with strawberries and cream recipes. If you saw my first strawberries & cream post, youโll know that I tried the Alpro strawberry milk and that wasnโt quite what I was hoping for. As a result, I ended up blending some strawberries with my Alpro vanilla soy milk for this recipe. That gave me the strawberry milk taste I was hoping for. The blended mix is deliciously bright pink. Then the pancake mix is a cute pastel pink. And the actual pancakes look very beige to me. Iโm not at all bitter or disappointed by this.ย ย
I used 125g of freshย strawberries, but you may need to reduce or increase this slightly depending on how juicy your strawberries are.ย ย

Serving Suggestionsย
I made mine with a berry compote andย sprinkledย with some icing sugar, but feel free to serve them plain or with lashings of syrup if youโd prefer. The nutritional information provided includes the berry sauce.ย ย
Vegan Strawberry Pancakes Recipeย
This recipe is gluten free, dairy free, vegan and nut free. It does contain soy.ย ย

Vegan Strawberry Pancakes Recipe
A deliciously fluffy stack of vegan strawberry pancakes with berry sauce, made with some vanilla soya milk to give it strawberries and cream sweetness.
Ingredients
- ยพ cup vanilla soy milk
- 125 g (ish) fresh strawberries
- 1 heaped tsp baking powder
- 1 cup GF oat flour
- 1 tbsp sunflower oil
- 1 flat tbsp sugar
- 1 tsp vanilla extract
- Oil to fry in if you donโt have a good non-stick pan
To serve
- 1 cup frozen berries
- A few chopped strawberries
- Icing sugar
Instructions

In a small saucepan on a low heat, add the cup of frozen berries. Leave them to reduce while you cook the pancakes, stirring occasionally. Reduce the heat and add some water if it becomes too thick.

Blend the strawberries and vanilla soy milk together. Tip into a measuring cup until you reach one cup total. Blend more if necessary .Add the tbsp of oil and vanilla to blended strawberry mix and stir to combine.

Sieve oat flour, sugar and baking powder to a medium to large mixing bowl.

Add wet ingredients a little at a time to the dry ingredients and gently, slowly stir until just combined. You may not use all of the liquid. Preheat a non-stick frying pan over medium/medium-low heat. You want it warm but not hot. Oil should not smoke when added to the pan.

Once hot, drizzle the surface with oil (if necessary for your pan) but wipe away any surface excess with a paper towel. You donโt want any pools of oil, just a light grease.

Then pour a small amount of mix into the pan. Cook until bubbles appear and the sides are beginning to dry - about 2-3 minutes. Cook for another 2-3 more minutes on the other side.

Once pancakes are cooked, sprinkle with icing sugar, pour the berry mix over and add some chopped strawberries to serve.
Serve and enjoy!

I absolutely love pancakes and I really want to try this recipe! I haven’t tried vanilla soy milk before but is it similar to normal soy milk? Would it matter if I use almond milk instead? And I think it was a wonderful idea to make your own strawberry milk instead of Alpro’s own.
I think it’s similar, just sweeter! Almond would work too. I don’t think the milk matters too much as long as it has a similar thickness/ consistency (so not coconut). You might want to add a dash of vanilla if you use plain milk
I make pancakes with coconut milk, but I think soy would be good too. I love all of your recipes. You have opend me to try more vegan food that tastes great.

Strawberries and cream always reminds me of the Lord of the Rings, but right now, the reasons why that’s relevant to the story are escaping my sleep-deprived brain. I’ve not tried strawberry pancakes before, I’m so boring when I do make pancakes, they’re normally just plain with a bit of syrup on top – I need to be more ambitious with mine!
