
Pancakes are one of my favourite foods, and have been since I was a little girl. Pancakes were also one of the things I was most concerned about potentially giving up when I switched to a vegan diet. They were one of the first ‘alternatives’ I was desperate to find.
Ideally, I wanted them to be gluten free as I find gluten pancakes can be quite stodgy. I hate bananas so the classic: oats, banana and dairy free milk options were out straight away. After trying many recipes and altering different ingredients here and there, I finally created these ones.
They’re light and fluffy but still suitably filling, sweet without being sickly sweet (although there are a few optional extras that make them super sweet), quick and easy. These are my go-to weekend brunch at home option and you can tweak them to add as many extras as you’d like.
Buckwheat alone has quite a plain taste so these pancakes are amazing at absorbing the flavours of extra ingredients or sauces you combine with them.

This recipe is vegan, gluten free, soy free, nut free (depending on milk of choice).
Serves 2
Approximately 15 minutes
Ingredients:
- 1 cup buckwheat flour, or GF oat flour for a more neutral taste.

Nutritional information is for one serving including sauce, without any optional extras.
- 1 cup dairy free milk
- 0.5 tbsp sunflower oil
- 1tbsp brown sugar
- 1tbsp baking powder
- 1tsp vanilla extract
For the sauce:
- 140g frozen blueberries, for the sauce
- 1tsp sugar (optional)
Extras
- Syrup to taste (optional)
- 1tbsp chia seeds (optional)
- Choc chips (optional)
Method:
- Place non-stick frying pan on a medium heat.
- Add all dry ingredients to a mixing bowl and stir to combine.
- Add the wet ingredients; the mixture should be quite thick. More like natural yoghurt than a runny batter.
- If you’d like to add any berries/ choc chips to your mixture, stir them in now.
- In a small saucepan place the frozen blueberries on a low heat with a small amount of water, and sugar if using. Leave these to reduce as the pancakes are cooking, stirring every few minutes.
- Pour mixture into preheated pan, cooking for approximately two minutes on each side.
- Once cooked, stack them up and pour the sauce over them

You could totally make them with regular plain flour and they’d work, just be a bit heavier. Or normal self raising and ditch the baking powder, as long as the basic ratios are the same I think you could use whatever you wanted. Have fun experimenting! x

Oh!! I love Pancakes. The pictures are so mouth watering.. I mostly avoid eating to control the intake of sugar as I have a family history of Diabetes. But I do treat myself once in a while. 🙂
A treat every once in a while does you good I think! I actually have diabetes myself and I don’t find it holds me back too much, everything in moderation I guess 🙂 x

That’s one of the things I love about pancakes! You can have the same basic recipe and have loads of different extras and they can taste totally different every time and never get boring. x
