
Actually, I think they turned into a quadruple chocolate pancakes recipe, but still, chocolate pancakes anyone? Some of you may remember that around a month ago I shared my birthday breakfast both here and on Instagram. It was this stack of chocolate pancakes with some Ben & Jerry’s on the side; very casual at 9am on a Saturday morning. At the time, I didn’t share the recipe because I thought I could improve the texture slightly from my first attempt. I am however using the same photos as last time because the extra white chocolate and ice cream on the side isn’t something I wanted to repeat every time I tried to get the texture right. I’m sure you can understand.
Nutritional Information
Obviously, these are by no means a healthy breakfast option, but they could be far worse. The base is GF oat flour, and the chocolate comes in the form of cocoa/ raw cacao powder, chocolate chips and chocolate almond/ soy milk. Cocoa is an iron rich food, oats are high in fibre and I used Alpro milk, which is vitamin fortified. As a result, this recipe contains around a quarter of the RDA of fibre and iron and over a third of the RDA of vitamin E and calcium. Like I said, not at all healthy, but you can at least get some vitamins and minerals.
Chocolate Pancakes Recipe
To make this recipe, I adapted the ingredients from my peanut choc chip pancakes and classic pancakes recipes.
This recipe is gluten free, dairy free and vegan. It has the option of being either nut free or soy free.

Chocolate Pancakes Recipe
A stack of chocolatey pancakes with melted white chocolate and ice cream. A perfect treat breakfast or dessert.
Ingredients
- 1 cup GF oat flour
- 2 heaped tsp baking powder
- 1 tbsp powdered cocoa powder
- 1 tbsp brown sugar
- 1 tbsp sunflower oil
- 1 cup chocolate soy/ almond milk
- Approximately 30g chocolate chips/ chunks
To serve:
- 25 g dairy free white chocolate
- Ice cream
Instructions

Sift oat flour, baking powder and cocoa to a medium to large mixing bowl and whisk to combine. Stir in the sugar

Measure out chocolate milk in a large liquid measuring cup, then add oil and whisk to combine.

Add wet ingredients a little at a time to the dry ingredients and gently, slowly stir until just combined. You may not use all of the liquid. Then stir in the chocolate chips.

Preheat a non-stick frying pan over medium/medium-low heat. You want it warm but not hot. Oil should not smoke when added to the pan.

Once hot, drizzle the surface with oil (if necessary for your pabut wipe away any surface excess with a paper towel. You don’t want any pools of oil, just a light grease.

Then pour a small amount of mix into the pan. Cook until bubbles appear and the sides are beginning to dry - about 3-4 minutes. Cook for another 2-4 more minutes on the other side.

While the pancakes are cooking, microwave the chocolate to serve with for around 45 seconds until melted. Set aside until pancakes are finished. This is a personal preference, but I removed my ice cream from the freezer at this point too so it wasn’t too hard to serve.

Once all pancakes are cooked, stack them up, drizzle with melted chocolate and add ice cream to your plate before serving.
Serve and enjoy!
Recipe Notes
Nutritional information is for 1 pancake with some melted chocolate. It doesn't include the ice cream as that varies so much depending on brands.

When I first saw this recipe on my twitter timeline I knew I had to make them one because I love pancakes and two because chocolate anything is always guaranteed to taste good! I really love how filling they were, I didn’t have ice cream on the side of mine though, maybe for a dessert I’d add some ice-cream, I just had them for breakfast two days in a row haha!
The first day I added chocolate chips and it was a super chocolatey pancake of course so I thought hmm, maybe tomorrow to have it without chocolate chips to enjoy the pancake properly and not just taste melted chocolate chips – so when I didn’t add the chocolate chips for the next time I had it, it was actually maybe even a bit better! I felt like I fully enjoyed the texture of it properly. I drizzled honey on top for both times, and I am 100% most definitely make these again!

I haven’t made pancakes in a while because last time I made them it was so greasy and oily that it turned me off for a while, and it might have been in large because I used olive oily, and seeing that you used sunflower oil here, makes me want to try again. I would have never thought of changing the type of oil I used tbh.
