
I don’t know if anyone remembers, but when I made my Wimbledon Strawberries & Cream pancakes, I was quite disappointed that they didn’t turn out pink. I’m sure everyone else has moved on, but I couldn’t quite let it go. What else has a stronger colour? Blue. Let’s try to make some blue vegan blueberry pancakes. I’m writing this bit in advance, please know that I’m extremely disappointed if this didn’t work out. These pancakes contain blueberry yoghurt, which I’m hoping will be strong enough to keep them blue after they’ve been cooked. Â
They’re blue, and yes, I did a happy dance in my kitchen when the first one was blue. Annoyingly, a little bit of the blue tint got lost on camera, but I still think you can tell. So, here’s a selection of photos where my blueberry pancakes are looking blue. Â

Seasonal Ingredients Â
Blueberries were my seasonal ingredient of choice last week too, so I’m going to keep this brief. British blueberries are in peak season from July to August.Â
Nutritional Information Â
I know everyone has their own ideas of what healthy/ unhealthy food looks like, and pancakes usually fall into the latter. But I’m going to put it out there and say, I don’t think these ones fall into the unhealthy category. The ingredients are oat flour, blueberries, an Alpro yoghurt and a little oil. Pretty much the same ingredients as if you’d had granola, fruit, and yoghurt for breakfast, which I’m confident most people consider a healthier option. Â
Per pancake, this recipe contains 3.5g protein, 2.6g fibre and less than one gram of glucose. The fortified non-dairy products are a source of vitamins D, B12 and calcium.Â
Vegan Blueberry Pancakes RecipeÂ
These pancakes are light and fluffy, while being naturally sweet. This recipe contains no added refined sugars other than those in the milk/ yoghurt. And the mix smells like freshly baked muffins, which is incredible on a Sunday morning. Â
This recipe is gluten free, dairy free, nut free and vegan. It can be soy free if you use an alternative non-dairy milk/ yoghurt to the ones listed below. Â

Vegan Blueberry Pancakes Recipe
Ingredients
- 1 cup GF oat flour
- 1 heaped tsp baking powder
- 1 Alpro blueberry yoghurt 100g approximately half a cup
- ¼ cup blueberries
- ½ cup vanilla soy milk
- 1 tbsp sunflower oil
- Additional blueberries to go inside the pancakes optional
Instructions

Sift the flour and baking powder together in a mixing bowl.

Blend the ½ vanilla soy milk and ¼ cup of blueberries together to make a blue milk. Stir the blueberry yoghurt into the milk mix, then add the sunflower oil.

Stir the wet ingredients into the dry, add a tiny bit more milk if necessary. The end mix should be very thick, too thick to pour, like a very thick Greek yoghurt.

Heat a frying pan on medium heat, add a drop of oil if you’re not using a non-stick pan. Spoon/ ladle some of the mix into the pan. As it’s thick, it doesn’t spread much when you add it to the pan, so the shape of what you spoon in will be the size of your pancake. Drop a few blueberries into the pancake mix while in the pan. Be careful that they’re in the pancake, not on top. If they’re raised it will stop the pancake cooking properly when you flip it. Cook for 2-3 minutes, then flip and cook for another 2 minutes on the other side.
Serve and enjoy!

I love fruity pancakes, especially with fresh fruits like blueberries, strawberries, or peaches. This recipe looks amazing and not lacking in flavor, and your dairy substitutes are perfect.

I’m sitting here wondering if American blueberries peak season is July to August too because the second I saw pancakes in the title I already knew it was time for another pancake adventure since my chocolatey one went so well!
I feel like pancakes always seem to be in the unhealthy category but personally I think it’s what you put into it- it’s like a granola yogurt fruit bowl but like evolved into a pancake! One thing I really like is how filling this sounds – and yay fluffy! Fluffy pancakes are my weakness haha, I’m going to see what the blueberries are looking like by me and will have to keep you updated on said kitchen adventure that may take place tomorrow!
I personally love adding blueberries in – I’ve never blended them though, just added them whole so like they’re there like chocolate chips in disguise haha – super excited to make these!

Oh my gosh, I can’t get enough of berry pancakes!! I’ve made them with a mix of blueberries, raspberries, and blackberries before, so my pancakes looked like a very colourful bruise, but they tasted oh so good :’)
These look so delicious! I love a fruity pancake. Syrup is super expensive here so it’s great to have a nice fruit on top where you don’t need syrup. YUM!

I prefer plain pancakes. I can’t eat the ones with fruit on top but I could try if the fruit is cooked in. I only eat blueberries ‘in’ muffins so this would work. Congrats on your blue color, they look yummy! 🙂

Blueberries are my least favourite berry but seeing these pancakes I think I would certainly make an exception and give these a go! They look divine and as I’ve been attempting more vegan diet so these would be a perfect alternative for breakfasts I think?

Is it bad that I’ve never had any pancakes with fruit in them? These could entice me though.
This looks so good, personally, I do prefer plain pancakes but this is would be a great way to get more fruit in.
