
Hello everyone and welcome back to another year of Recipe A Day May!! I can’t believe it’s been a full year since this series started! I’m starting with an overnight breakfast recipe, and I’m fairly certain I did last year too so we’ve gone full circle. This overnight cherry chia crunch recipe is so easy, but it does involve a bit of prep. I made my own jammy layer for this, but you could use a store bought one if you wanted to speed the process up.
Recipe A Day May
For those who are new here, or have forgotten in the last year, I thought I should explain what this series is all about. The first part is pretty self explanatory, a new recipe every single day throughout the month of May. The other part, these 31 recipes will not only be new to you, but new to me. Each one will be something I’ve made for the first time in an attempt to mix things up and try something new. If I fail at something, we laugh about it together. Hopefully that doesn’t happen…
Overnight Cherry Chia Crunch Recipe
This recipe is a combination of a few things, I layer of crunchy granola, a vanilla chia pudding, and cherry jam and topped with a square or two of dark chocolate. Between the chia seeds and the nuts in the granola, you get your daily amount of omega 3. This recipe uses vanilla soya milk to make the chia pudding, this is to make it sweet enough that we don’t need to add any additional sugars to the recipe.
The Recipe
Prep for the cherry chia jam and vanilla chia pudding is long, but both keep for several days in the fridge. You can easily make bulk servings of each and simply spoon it into a jar for breakfast each day.
This recipe is gluten free, dairy free and vegan. You could make it soya free by switching out the milk for another non-dairy alternative.
The chia pudding part of the recipe is for one serving but the jam recipe will make approximately 4 servings.

Overnight Cherry Chia Crunch Recipe
Ingredients
Cherry Jam
- 1 cup frozen cherries
- 2 heaped tbsp chia seeds
Vanilla Chia Pudding
- ½ cup vanilla soy milk
- 2 tbsp chia
Layer of granola (approx. 20g)
2 squares of dark chocolate or some nuts to serve.
Instructions
Cherry Chia Jam

Add a small amount of water, just enough to cover the base of your pan to a small saucepan on a low heat. Then add the frozen cherries, still on a low heat. Over time, the cherries will start to break down. As the cherries melt, the water levels should balance, but keep an eye on the pan to make sure nothing is sticking.

After approximately 15 minutes, the cherries should have started to break down slightly. At this point, stir in the chia seeds and leave to simmer for another 10-15 minutes.

Remove from heat, it doesn’t matter if it’s still runnier than you’ll expect as the chia seeds will absorb the excess liquid as they expand.

Transfer to a dish with a resealable lid and leave (uncovered) to cool before putting in the fridge overnight, or at least 4 hours.
Vanilla Chia Pudding

Add the chia seeds and vanilla soya milk to a small tupperware or jar, stir to combine then cover and refrigerate for 4 hours (minimum) or overnight.
Assembly

It's finally time to put all the layers together! Add a layer of granola to the bottom of a kilner jar (or another serving dish). Spread a reasonably thick layer of cherry chia jam over the granola, then pour the vanilla chia pudding on top. Add some extra nuts, dark chocolate or more granola to the top to serve.
Serve and enjoy!

I love the sound of pots like this! I bet they’re really filling and always good to start the day with a healthy breakfast. I’m not a huge fan of cherries but I guess you could put any berry you want in these?

Totally! I’m going through a bit of a phase right now with cherries but you could do the exact same thing with blueberries or strawberries and it would be just as delicious! There’s a strawberry recipe with a similar jammy texture coming next week if you’d like to try that one
Overnight breakfast recipes are my absolute go-to throughout the school year!!! I usually opt for overnight oats, and although those can vary and be switched up a bit, they do get a little old after awhile. I’m definitely going to have to try this out before my semester ends in 3 weeks!

I’ve seen overnight vegan recipes a lot but this is the first one I would actually try, and I love that it doesn’t have any oats in it.
I haven’t tried this overnight recipes yet. And reading this makes me want to try it out myself.

Love the sound of this, I made my first ever overnight breakfast recipe the other day and waking up in the morning and eating it before work was the best thing ever, especially because usually I’m in a rush so it’s just toast on most days!

I love breakfast pots like these, although I’m not a huge fan of cherries. I’d probably subsitute them for raspberries.
