
Some of you may remember that last year I did this thing called Recipe A Day May, you’re probably also aware that tomorrow is May 1st. I’ve mentioned a few times that I’m doing that series again this year. And with that, recipe prep is pretty much the only thing I can think about right now. While I’ve been prepping for this year, I thought it would be fun to take a trip down memory lane and look back at last year’s recipes. In this post, I’m going to be sharing the ones that I still eat now and the ones that stuck with me from last year.
What Is Recipe A Day May?
For those of you who don’t know, Recipe A Day May is not only a new recipe post every day, each recipe is something that I’ve never made before. The idea is to encourage people to try new things, even if that’s cooking something familiar in a slightly different way or adding some different spices to a familiar recipe.
Last year, I only decided I was doing this in April and I’d only made about 3 or 4 by May 1st . This time, I decided last September, starting making a list of potential recipe ideas in January and made the first ones in February/ March. As of April 28th, I have 29 ideas, have made 18 of them and have 16 posts scheduled. In short, this year should be a lot better. I’m really happy with the ones I have so far, hopefully you’ll like them too!

Chilli & Tamari Baked Aubergine
I ended up making this a lot last summer and I didn’t even like aubergine before I made this. There’s another aubergine recipe coming this year, and this recipe is the one to thank for the fact it’s an ingredient I even consider using.

I’ve probably made this at least once a month since I posted this recipe. I know that doesn’t sound like a lot, but considering how much time I spend making new recipes/ trying to come up with new ideas, I don’t actually repeat my meals very often at all. This one always ends up on my table for family events/ dinner parties too.

Last summer was so hot that recipes like this were cropping up a lot. I haven’t made this in a long time because of the less than wonderful weather we’ve had so far, but I can definitely see me eating this one again this summer. It contains pomegranate and mango, keeping it fresh and sweet.

I’m glad your doing this series again! I always love reading your recipes, it’s gives me some ideas for things to hopefully make. The granola clusters look amazing, I’ll have to go back to that becaus they look so yummy! X

I’ve never heard of Recipe a Day May before but I’m looking forward to seeing your recipes and if last year’s are anything to go by I’m sure they’re gonna be amazing! I like the look of the chickpea nuggets and the granola clusters.

I remember the Granola Clusters. The picture made my mouth water. The recipe sounds so delicious. I was not aware of A Recipe A Day In May.
This is a very cool thing of you to do, and I love the collection of recipes you have here.
I love this idea, such a great way to come across new recipes so thank you for doing this recipe a day! Out of your faves from last year, I love the sound of the chickpea nuggets, they do sound like great things to make for family parties, I’m so used to just seeing chicken nuggets at those kind of parties but I can’t eat them so it’s a lovely alternative!
