
I know, it’s May, soup isn’t the main dish on the menu, but its England and there’s a solid chance it’s still cold. And it makes a nice lunch option regardless of the weather. This one doesn’t involve much hands-on prep, although it isn’t the quickest soup recipe ever. This sweet potato & red pepper soup is hearty without being heavy.
Sweet Potato & Red Pepper Soup Recipe
The sweet potatoes bulk this soup out a little, but aren’t as heavy as regular potato soup which helps the soup to feel fresh. Peppers, sweet potatoes and sweet paprika provide the perfect balance of sweet but smokey.
I kept the skin on my potatoes, but you could peel them if you’d prefer.

Of course, this recipe has a really high fibre content as well as being high in vitamin C. And sweet potatoes are high in vitamin A as well as B vitamins. The seeds add some healthy fats and a little protein.
This recipe is dairy free, gluten free, soy free, nut free and vegan.

Sweet Potato & Red Pepper Soup
Ingredients
- 2 medium sweet potatoes cubed
- 1 tbsp sweet paprika
- 3 red peppers halved (2 use the bag steaming technique, one sliced)
- 60 g mixed seeds
- 2 tsp hot chilli powder
- 1 tsp garlic salt
- 3 cups vegetable stock
- 1 tbsp oil
Instructions

Preheat oven to 190°c. In a large mixing bowl, add the cubed sweet potato, cooking oil, garlic salt, and sweet paprika to evenly coat the sweet potato then transfer to a large baking tray.

On another baking tray, place the 3 red peppers, halved so that the outside is on the surface. Place both baking trays in the oven for 25-30 minutes until peppers have blackened on the skin and sweet potatoes are cooked.

once cooked, place two of the peppers in a resealable bag to steam for a further 10 minutes. After that, remove from the bag and peel the skin off the peppers. Add the sweet potatoes and peeled peppers to a large pan with the vegetable stock, using a hand blender, blend until smooth. Place on a low-medium heat to warm the soup through.

Meanwhile, add the seeds to a small frying pan on medium heat and cook for 3 to 5 minutes until lightly toasted. Add the chilli powder to the pan and toss to combine before removing the pan from the heat. Slice the remaining red pepper.

Add soup to bowls and add the seeds and sliced red pepper as a garnish to serve.
Serve and enjoy!

Do you guys like the sound of this soup? I know soup isn’t always the dish of choice in spring/ summer, but this one is quite light and the sweet paprika keeps it tasting fresh. I’m writing this April 11th, has it warmed up where you are yet? It’s a chilly 7°c where I am today.

Actually, the weather has been so chilly lately that Alan and I have been having soup for lunch every day this week. Bring back the sunshine, I am not a fan of this brisk cold snap. I’m definitely in two minds – on one hand I’m not a huge fan of sweet potato but on the other hand, peppers and paprika are an incredible combination. And the look, colour and consistency of this dish all really damn appeal to me! I’d definitely give it a go with a nice chunk of buttered bread to dip in hehe.

Unpopular opinion but I really don’t like sweet potato. Pity.
I’m surprised at how cold it still is for May so I’m definitely still enjoy warm soup for lunch! I love the look of this one, can’t wait to give it a try! xx

It’s never a bad time for soup! I could eat it all year round, and it is cold a lot in the England so is quite a staple for me. I’m a big fan of sweet potato, so I’m sure I’d like this, I’m a big fan of making my own soup as well so I think this will be one for me to have a go at!
