
I went through a phase last year where I was sharing a lot of overnight breakfast recipe ides, from oats to quinoa, chia…everything. Then, for some reason, I kinda stopped. I’ve shared the odd one here and there, but nowhere near as many as before, so I thought it was time for a new one. This one is inspired by the recent heatwave. I don’t know about you, but I lose my appetite completely. This little pot of omega boosting goodness is perfect for a summer morning. There’s no prep required on a morning. It’s cold, healthy, fruity and loaded with omega 3 to help you get your vitamins and minerals in even if you’re not eating much.
Seasonal Ingredients
I know the title says berry, but for this one, I happened to use cherries. But, you can use whatever seasonal berry you want, from strawberries, blueberries or even a mixed summer fruit pot. All you need for the seasonal ingredients is one cup of seasonal fruit, so you can adjust to suit your own preferences.
As I used cherries, a quick seasonal note – cherries are in season May to August. Although, sour cherries typically have a shorter season than sweet. Sour cherries tend to be in season June to late July, sometimes into August.

Nutritional Information
The main ingredients in this recipe are cashews and chia seeds, both great sources of healthy fats and fibre, as well as little bit of plant protein. This recipe contains over 100% of the RDA of omega 3 and around 1/3 of the recommended amount of omega 6. it also contains 11g of fibre and 11.5g protein. If you’re using fortified non-dairy milk, you’ll also get some B12, calcium and vitamin D. as I opted for almond milk, this recipe provides 20% of the RDA of vitamin E. Chia seeds are also a source of iron, with this recipe containing 5.9mg (RDA 18mg).
Berry Overnight Breakfast Booster Recipe
This recipe is in three layers, the bottom is an adaptation of the cashew cream I shared during Wimbledon fortnight, and the other two layers are chia based. I added some pomegranate seeds to my vanilla layer. If I’m completely honest, that was only to make it look prettier. But you could add some or fresh berries in this layer too if you wanted.
If you’re wanting to use frozen berries, try to let them defrost before starting this recipe. Alternatively, place them in a bowl of boiling water for 3-5 minutes before starting then drain when you begin prepping the recipe.
As I mentioned, the base of this is cashew cream, which involves soaking time. If you want to make this as an overnight recipe, I’d suggest adding the cashews to water in the morning, so they’re ready to prep for the evening.
This recipe is gluten free, dairy free, soy free and vegan.

Berry Overnight Breakfast Booster Recipe
Ingredients
Base layer
- ¼ cup cashews
- ¼ cup pitted cherries or other fruit
- 1 tsp liquid sweetener optional depending on taste preference
Middle Layer
- 1 heaped tbsp chia seeds
- 1/3 cup almond milk
- Dash of vanilla extract
- ½ tsp maple syrup optional
Top layer
- 1 tbsp chia seeds
- ¼ cup almond milk
- ½ cup pitted cherries
Instructions
Base Layer

Soak the cashews in water (enough to cover them fullfor at least 4 hours, ideally overnight/ the working day.

Add the soaked cashews and cherries to a blender and blend until smooth and creamy. Depending on your blender, this may take a while. Be patient. Taste and add liquid sweetener if necessary. I added a little bit when I made this with cherries but didn’t need any for the strawberry version.

Spoon the cashew cream mix into a jar and try to spread as evenly as possible.
Middle Layer

Add all ingredients to a small dish and stir until fully combined. Continue with the top layer now so they can set at the same time.
Top Layer

Blend the almond milk and cherries to make a cherry milk, then stir in the chia seeds.

After around 20-30 minutes, both layers should start to become gelatinous but nut fully set. At this point, it can be transferred into the main breakfast jar and it will fully set overnight. It shouldn’t be runny when added to the jar. If adding another fruit to the vanilla layer, stir that through now.

Then spoon the vanilla layer on top of the cashew cream and finally add the cherry layer. Refrigerate overnight and grab your set breakfast the following morning.

Sprinkle with some nuts/ seeds/ granola to serve.

I like the sound of this, I’ve only ever made one overnight breakfast recipe before and it definitely makes the morning so much better when you have something like this to eat. I’ve not tried adding cherries before, but I bet the sweetness of it makes it taste very delicious.

So, I am usually skeptical of overnight recipes but this looks amazing! Blending cherries and cashews are the creamiest, richest and one of the most delicious things a person can eat (if you like nuts).
