
Hey everyone and welcome back to #RecipeADayMay. You may remember last month I did a post on having quinoa for breakfast. After trying what felt like a million different varieties preparing for that post, I didn’t have any for breakfast for quite a while. However, I really enjoyed it and thought it was about time I prepared a different version. Today I’m making overnight peanut quinoa.
This recipe contains breakfast classic ingredients, oats and peanut butter as well as quinoa, vanilla and some extra toppings.
Great for people on the go and a super filling breakfast you can prep the night before.

This recipe is gluten free, dairy free, soy free and vegan.
Ingredients
- 50g dry quinoa
- 25g GF oats
- 150ml dairy free milk
- An additional 80ml dairy free milk
- 100g dairy free yoghurt (I used Alpro almond)
- 1 heaped tsp smooth peanut butter
- Syrup to taste
Toppings
- 25g flaked almonds
- 15g dark chocolate
Method
- Prep quinoa as per packet instructions
- Place quinoa and 150ml dairy free milk in a small saucepan on a low heat and leave to cook, stirring occasionally. When cooked there should be little to no liquid remaining.
- When there is a tiny bit of milk remaining, stir in the peanut butter. Adding it while the pan is still on the heat will make it combine easier.
- While the quinoa is cooking, place the oats in a separate dish and cover in dairy free milk, just enough to cover the oats with no extra on the surface.
- When quinoa is cooked, leave to cool then stir in syrup to taste.
- Then stir in the a tsp yoghurt to the oats and the rest into the quinoa.
- Time to assemble. Add the oat layer to the base of your jar. Now add the quinoa layer over the mango
- Place in a fridge overnight to set. Consume within 3 days.
- Add toppings before serving

Serve and enjoy!

This looks delicious. I absolutely am obsessed with Alpro yoghurts right now, I can get through a pack of 4 in a day. I’m yet to try to almond one though!
