
Hey everyone and welcome back to #RecipeADayMay. Today’s post is inspired by the summer weather we’re having and the standard disappointment you get used to experiencing as a vegan. You get a few dips at your average summer party and barbecue, hummus, salsa and maybe a guacamole if you’re lucky. Today’s post is my ultimate dipping platter, one is a longtime favourite and two are brand new.Â
#1 Spicy Red Pepper Dip – My longtime favourite.Â

Ingredients Â
- 2 red peppers, halved Â
- 1 small jar sundried tomatoes, drained (approx. 135g)Â
- 3 cloves garlic, peeledÂ
- 1 red chilli, including seedsÂ
- A dash of balsamic vinegarÂ
Method Â
- Preheat oven to 225°cÂ
- Halve the peppers and place them on a baking tray on the top shelf of the oven.Â
- Leave for 25-30 minutes until peppers are starting to blacken on the surface. Â
- Once peppers are cooked, add to a blender with all other ingredients and mix until smooth.Â
#2 Fresh Pea and Basil Â

Ingredients Â
- 1 cup peasÂ
- 30g fresh basilÂ
- ½ tbsp tahini Â
- Juice of one lemonÂ
- A can of butter beans, drained and rinsed Â
Method Â
- Add all ingredients to a food processor and mix until smooth. Â
That simple. Â
#3 Smoky Carrot Hummus Â

This hummus is oil free to try and make it a little healthier so it could be a tiny bit creamier. Although I’ve substituted the oil for a splash of soy milk so it is still creamy, you could add oil if you wanted a super creamy batch. Â
Ingredients Â
- 3 carrots, choppedÂ
- 2 tbsp tahini Â
- 1 can of chickpeas, drained and rinsed Â
- ½ tsp cumin Â
- 1tsp smoked paprika Â
- 50ml soy milk Â
Method Â
- Lightly fry the carrots using a few sprays of oil spray in a small frying pan for 5 minutes to lightly soften. Â
- Add the paprika and cumin to the pan and stir for one more minute.Â
- When carrots are cooked, add all ingredients to a food processor and mix until smooth, you may have to scrape the sides down once or twice. Â
As you can see, they’re all super simple and quick to make and perfect for any sharing platter! Which is your favourite? Â

I’ve been obsessed with crackers and dip recently so these were definitely the recipes for me! I’m not usually a fan of spicy things but that red pepper dip sounds so tasty! Yum!

Just became a vegetarian January 1st of this year and plan on becoming a vegan eventually. Anyway, I am constantly looking at recipes with hopes of making something but haven’t yet. I love the sound of the red pepper dip; but I’m allergic to sun dried tomatoes- would it work with just fresh tomatoes?
Definitely going to give the pea and basil one a try for my holiday next week!xx

Sorry to hear that! I think you could make regular tomatoes work but you’d probably have to roast them first so give them a softer texture. A little oil might help too as the sun dried tomatoes make it creamier. Hope you can find a way to make it work and enjoy the pea and basil! x
