
I know last weekās seasonal recipe also used nectarines as the main ingredient and this isnāt adding an awful lot of variety. But there’s a reason for the repetition. With the weather shift in the last week or so, I canāt help but feel a little bit more autumnal. And this nectarine parfait recipe is a perfect one to see you through the seasonal change.Ā With the addition of baked fruit, it’s great if there’s a bit of a chill in the air. Ā
Season IngredientsĀ Ā
As I’ve just said, itās the same as last week so letās keep this brief. Nectarines are inĀ seasonĀ in the UK from April to late August. When the seasons change, this recipe could easily be adapted for another fruit, such as plums.Ā Ā
Nutritional InformationĀ Ā
The nutrition for this post will vary a lot depending on your brand or recipe choices for the granola and yoghurt. If you opt for fortified yoghurt, youāll get some extra vitamin D, calcium and B12 (probably), but some brands add other vitamins too. I always like to get the fortified ones as a little boost.Ā Ā
Nectarines contain 20% of the RDA of vitamin A per nectarine and are also a source of vitamins C and B3.Ā
I worked out the nutritional information for this recipe using Alpro Greek Style and my own sugar free nutty granola recipe as the reference. In total, that provides 14g protein per serving, 7g of fibre and 287 calories.Ā Ā

Nectarine Parfait RecipeĀ
This recipe is very easily prepped with just four ingredients and 15 minutes cooking time. It can be prepped the night before and served cool or eaten warm, another reason why I think itās great for the seasons changing.Ā Ā
I added a tsp of sugar to my nectarines as they were baking, to offset the added sugar, I used a refined sugar free granola and a plain yoghurt rather than a heavily sweetened flavour.Ā Ā
This recipeĀ is gluten free, dairy free and vegan. It can be nut free depending on your granola of choice.Ā

Nectarine Parfait Recipe
Ingredients
- 150 g dairy free yoghurt I opted for Alpro Greek Style as I think a thicker texture works better here
- 1 nectarine halved and the stone removed
- 1 tsp soft brown sugar
- 25 g granola of chopped nuts
Instructions

Preheat oven to 180°c.

Put the nectarines on a baking tray, flesh side up and sprinkle each side with ½ tsp brown sugar. Place the tray in the centre of the oven and cook for 15 minutes, nectarines should be juicy and turning slightly golden.

Add the yoghurt to the bottom of a jar or bowl and sprinkle a very light layer of granola over the top. Chop the cooked nectarine into small squares then add that to the bowl/ jar. Pour the remaining granola or nuts over the top before serving.
Serve and enjoy!
Recipe Notes
If making the night before, cook the nectarines and refrigerate but assemble the jar the following morning so the granola doesnāt get soggy overnight.

I’ve been putting on my huge jumpers whenever I’ve had the chance, I’m SO ready for Autumn. I’ve never actually had parfait so I’d have no idea what to expect with this! I am a sucker for citrus flavours though so I think I’d really enjoy it – plum sounds SUPER interesting too, though!

The Nectarine Parfait recipe has all the ingredients that I like to eat. Putting plum or cranberries in it also sounds delicious too. What a simple breakfast idea. I’ve never tried heating fruit but I am going to try it.
I don’t really feel autumnal at the moment, because it’s still in the 90-100°F where I live, so it still feels like summer, but where I live there is never much of a fall or spring but always a lot of summer and winter. Lol

I will say this definitely looks good! But I know me and I won’t eat any of the ingredients lol It’s an ongoing joke with my mom and I that she did great with getting to eat vegetables as a kid…fruits??? Not so much!

I’m pretty happy with the cooler weather at the moment, I much prefer that kind of weather to the warm and sticky weather!! This sounds very tasty, this would be something my boyfriend would love. I’ve probably said this before, but we’re always so boring with breakfast so would love to make these kind of things the night before for breakfast the next day. They would be great for puddings as well.
