
When I first sat down and made my list of strawberries and cream recipes, a lot of them were (obviously) desserts. And as great as that is, two weeks solid of dessert recipes isn’t exactly my thing. One of the first alternatives I thought of was a strawberry granola recipe, with some sort of vanilla yoghurt probably to add the ‘cream’ element. But I thought that was a little boring seeing as I have several granola recipes already. Then I realised I could make this recipe a little more interesting by serving it with an alternative, the strawberry cashew cream. And we all know I love granola/ granola recipes, so one more can’t hurt…right?
Ingredient Choices
I got this idea when I was making my protein balls recipe. In that recipe, I switch out the dates for Urban Fruit as they have a similar texture. Then I thought the same thing might work here. I usually blend dates with water in my granola recipes as a refined sugar free alternative to syrup and thought that using the Urban Fruit in this way would give the recipe a nice subtle hint of strawberry flavour.
The strawberry cashew cream is based on the recipe I used for my strawberry cheesecake layer in my last recipe. It has the same base but is a thinner texture to keep it creamy and stop it setting in the fridge.
In this recipe, I still used some dates mixed in with the Urban Fruit, but you could use more Urban Fruit for a stronger strawberry flavour.
I added almonds to mine as a source of healthy fats, but you could use another nut of your choice. This recipe also includes buckwheat as another way to switch up the texture a little bit. I wanted to include some freeze dried strawberries too, but nowhere near me had any available, so I opted for more of the gummy baked strawberries instead.

Prep Time
The cashew cream requires pre-soaked cashews, so this recipe is best prepped the night before.
Strawberry Granola Recipe w/ Strawberry Cashew Cream
A healthy strawberry granola recipe, combined with a source of creamy healthy fats with the strawberry cashew cream. This recipe is gluten free, refined sugar free, dairy free and vegan. It does contain nuts.

Strawberry Granola Recipe w/ Strawberry Cashew Cream
Ingredients
Granola
- 1 ½ cups GF oats
- 1/3 cup buckwheat
- 75 g almonds
- 30 g dates
- 50 g urban fruit strawberry
- ¾ cup of water
- Dash of vanilla
- 40 g Urban Fruit/ freeze dried strawberries
Cashew Cream
- ½ cup cashews
- 100 g strawberries
Instructions

Prep: soak your cashews overnight or for at least 4 hours in a cup of water.

Preheat the oven to 175°c. Blend the Urban Fruit and water together and place in a small saucepan on a low heat for a few minutes until lukewarm, do not allow to boil. Meanwhile, add the oats, buckwheat, and almonds to a mixing bowl.

Add the vanilla to the saucepan and stir to combine. Remove from the heat and slowly pour over the dry ingredient mix until it is fully covered and is wet enough to easily form clusters. You may not need all of the wet mix, so be careful to add small amounts at a time (I used about 90%).

Spread mix evenly on a baking tray then place in the centre of the oven for 25 minutes, or until slightly crisp and golden.

Once cooked, remove from the oven and set aside to cool. Once cool, add the remaining Urban Fruit/ freeze dried strawberries. While the granola is cooling, drain the cashews and add to a blender, along with the strawberries. Blend until smooth and fully combined, then add to a small dish/ tupperware, ready to serve.
Serve and enjoy!
Recipe Notes
The nutritional information is for 50g granola with 2tbsp cashew cream. The strawberry granola alone is 185 calories a serving. This information is calculated using Urban Fruit rather than freeze dried strawberries.

I’ve recently been so into granola at the moment, it’s my go to breakfast, it just seems to keep me going up until lunch which is good because it means I get less hungry when I’m waiting for lunch time at work haha.
