This recipe is very easily prepped with just four ingredients and 15 minutes cooking time. It can be prepped the night before and served cool or eaten warm, another reason why I think it’s great for the seasons changing.
150gdairy free yoghurtI opted for Alpro Greek Style as I think a thicker texture works better here
1nectarinehalved and the stone removed
1tspsoft brown sugar
25ggranola of chopped nuts
Instructions
Preheat oven to 180°c.
Put the nectarines on a baking tray, flesh side up and sprinkle each side with ½ tsp brown sugar. Place the tray in the centre of the oven and cook for 15 minutes, nectarines should be juicy and turning slightly golden.
Add the yoghurt to the bottom of a jar or bowl and sprinkle a very light layer of granola over the top. Chop the cooked nectarine into small squares then add that to the bowl/ jar. Pour the remaining granola or nuts over the top before serving.
Serve and enjoy!
Recipe Notes
If making the night before, cook the nectarines and refrigerate but assemble the jar the following morning so the granola doesn’t get soggy overnight.
