But I’ve wanted to make a recipe like this one for a while now; ever since I gave up sugar last year, I’ve wanted to make a (refined) sugar free nutty granola (GF of course). Perfectly plain and easily matched with any milk/ yoghurt/ smoothie/ whatever you want.
I wanted to make nutty granola rather than a fully plain version to add some extra textures and health benefits. Plain granola without something in it doesn’t really have a lot going on in the nutrient department, so I wanted to make something better than that, especially as it’s lacking in refined sugar, I didn’t want it to be bland and tasteless.
Some of you may recall that last year when I gave up sugar, I started blending dates with water to make a refined sugar free ‘date syrup’ which I used in a lot of my recipes. I used it to make a peanut butter pretzel granola last year, and that worked perfectly. Before starting this recipe, I had some concerns that the dates may be too overpowering as this recipe doesn’t have as strong flavours as the one I made last year. It turns out the dates offered a hint of sweetness and didn’t have a strong taste at all once baked. They do however taste very sweet before cooked, in case anyone wanted to make this ‘rawnola’.

Refined Sugar Free Nutty Granola Recipe (Vegan + GF)
This recipe is gluten free, dairy free, vegan, refined sugar free, oil free and soy free. A crunchy, nutty and healthy breakfast option full of healthy fats to help keep you satisfied until lunchtime.


Refined Sugar Free Nutty Granola Recipe (Vegan + GF)
Ingredients
- 2 cups GF oats
- 75 g almonds
- 75 g pistachios
- 30 g pumpkin seeds
- 100 g dates
- 175 ml water
- 1 tsp vanilla extract
Instructions

Preheat oven to 170°c.

Combine all dry ingredients in a large mixing bowl.

Blend the dates and water together then transfer the liquid to a small saucepan. On a low heat, warm the date mixture through for a few minutes until lukewarm. Stir regularly and do not allow to boil. Then stir in the vanilla extract.

Once warm, pour the wet ingredients over the dry ingredients and stir until fully combined.

Spread mixture in a thin, even layer over a baking tray (you may need two). Place in the centre of the oven for 20-25 minutes until granola is golden brown and crunchy.
Serve and enjoy!
