
I’m not exactly sure where this recipe idea came from, and to be completely honest, it doesn’t make a whole lot of sense. Pancake day came and went a very long time ago now, and this recipe isn’t for a particular theme or series. But I decided to try something today, when I was making my first summer Strictly Seasonal recipe, I tried to not think about it and make the first thing that popped into my head. For some reason, it was this berry vegan crepes recipe. Now, I only ever make thick/ fluffy pancakes, so I’m not sure why I decided to do this, but here we go…
Seasonal Ingredients
This one is only coming a few days after my ‘what’s in season’ post so I’m thinking you probably don’t need this explaining. And it’s summer, so the seasonal part of this recipe is the berries. I cheated a bit and used a pack of mixed berries, so there’s a bit of everything in my sauce. But you can use strawberries, blueberries, raspberries or any combination of most berries and this recipe will be seasonal.
Ingredient Choices
I decided to make this recipe a one serving recipe. Most of my pancake recipes are for full stacks as a weekend brunch/ treat and that’s great, but I think this one is more realistic for a daily recipe. You can make this using fresh or frozen berries, frozen is quicker if you’re in a hurry!

And there’s a general misconception that pancakes are really unhealthy and they don’t have to be. Take my banana pancakes for example, oats, banana, almond milk…done. That’s no more unhealthy than a bowl of porridge would be. The unhealthy part is often the toppings. But as we’re using a berry sauce here, which is both healthy and naturally sweet. I added some granola to make this a more balanced meal, you can use store bought or make something like my refined sugar free granola for a healthier option. For mine, I chose a plain granola with some freeze-dried strawberry pieces, but you can use something more nutty if you want a bit more crunch.

Berry Breakfast Vegan Crepes Recipe
This recipe is a quick, small serving breakfast option for those who want a treat in a hurry. Gluten free, dairy free, nut free and can vegan. It does contain soy, although you could sub the milk.

Berry Breakfast Crepes
Ingredients
- ⅓ cup oat flour
- ⅓ vanilla soy milk OR ¼ cup almond milk and a tbsp vanilla extract
- 1 tsp flax seed and 3 tsps water (⅓ of a flax egg)
- 1 cup berries fresh or frozen
- 3 heaped tbsp granola
- Icing sugar to serve optional
Instructions

Start the berry sauce. If you’re using frozen fruit, simply add a small splash of water to a small saucepan with the berries and leave on a low-medium heat while you make the pancakes. For fresh fruit, add the fruit with 50ml of water on a low heat and leave to simmer for 15 minutes, stirring occasionally.

Mix the flax seed and water in a small dish and set aside for a few minutes.

Combine the flour, milk and vanilla (if usinand mix thoroughly, making sure the mix is smooth. Now stir in the flax egg mix.

Place a small frying pan on medium heat, add some oil if necessary, and add some crepe mix to the pan. This mix makes 3 small or 2 large crepes. Be careful not to add too much and tilt the pan to spread the mix. Cook for 2 minutes on one side, flip and cook for a further minute on the other side. Continue until you run out of mix.

By now the sauce should have thickened up, remove from the heat and spread a thin layer (about 2 tbsin a line through the centre of each crepe. Add a tbsp of granola, then fold the crepes into small rolls. Drizzle the remaining sauce over the top and sprinkle with icing sugar (if using)
Serve and enjoy!

These look lovely! Does the oat flour affect the consistency of the pancake at all? Are they still easy to flip/bind together?
Hi Hannah! I use GF oat flour in pretty much all of my pancake recipes and love it! It gives a nice neutral taste and I never have any problems binding. My non-stick pan is losing its non-stick so I had to give mine a little wiggle first but after that, they flipped fine x

Thanks for this super easy recipe! Looks delicious. I think I prefer crepes because you can do so much with them. Often American pancakes are sort of tasteless and an excuse to just have the syrup on top (although I /do/ LOVE pancakes, don’t get me wrong). Great post <3

As an American, I can safely say that I probably prefer the big, fluffy pancakes over crepes :’) However, I feel like I’ve outgrown my taste for the very thick panacakes; I now prefer thin ones, the ones that are most like crepes. I love a good single-serving recipe!! This sounds so delish, and like you said, it’s all healthy and good for me, so catch me at Whole Foods very soon picking up the ingredients I need to make this haha!
Oh these look delicious! By flax seed do you mean oil? I normally replace my eggs with bananas in pancakes but then they get quite thick <3
