
Depending on where you live and how you handle the heat, summer recipes can mean something different to everyone. Some people want something light, some people want something that doesn’t involve the oven and others don’t mind the oven heat, as long as it’s quick and the end product is healthy. This compilation of 10 vegan summer recipes has something for everyone.
10 Vegan Summer Recipes
Green Vegetable Courgetti

Serve as a main or a side. I know courgetti is very done, and not remotely close to pasta. But it is a great base if you don’t want a big meal, and this green bowl is light, low cal, nutrient dense, ready in about 15 minutes and doesn’t need an oven.

Tofu Summer Salad

High protein, great range of nutrient dense vegetables, great for lunch or dinner. This one also does not require an oven and takes 20 minutes.

Spinach & Garlic Beans

Side dish. Serve with rice, quinoa or as a side for a barbecue or buffet table. 25 minutes in total, with 20 minutes of cooking time and once again, a very light dish with no oven required.

Vegan Broccoli Fritters

No oven required, simple healthy fritters with minimal ingredients. This one works as a main with a simple side salad if you want something really light, or as a side dish as a light side for a bigger meal or buffet table.

Easy Tomato Quinoa

This recipe requires an oven but can be made at night or earlier in the morning and eaten cold for lunch or dinner the next day. Made in bulk, this could be a delicious, healthy meal prep option for summer. It isn’t the lightest option on the list, but it isn’t too heavy either and it contains a good balance of carbohydrates, and protein and contains a good range of vitamins and minerals.

Asparagus & Pea Soup

You may not want to make this as it uses the oven and takes a while to cook, but it’s full of fresh flavours with lemon and basil, light, and offers a source of protein if served along with the roasted chickpeas, and you can make it in advance. I’m not a huge fan of cold soups in general, but this one definitely could be served cold on a hot summer’s day if you wanted to make some in bulk one evening as meal prep.

Uses Oven (Optional)
The following three recipes are all salads that contain roasted chickpeas. I like using the roasted chickpeas for the texture, but if you like the sound of the ingredients and don’t want to use the oven, you could always keep the core ingredients and either add the chickpeas cold or warm them through in a pan for a few minutes.
Go-To Salad

As the title suggests, this salad is my go-to. It combines crunchy chickpeas and toasted seeds with kale, olives, sundried tomatoes and roasted peppers for a range of textures, protein and healthy fats. It’s easy to throw together, and the roasted ingredients can be served cold as suggested above if roasting the chickpeas is a deal breaker.

Sweet Nectarine Salad

Sweet nectarines paired with salt and pepper roasted chickpeas with a kale base and orange balsamic dressing. Seasonal ingredients, full of fresh flavours, but it does use the oven unless you opt to serve the chickpeas cold.

Omega 3 Apple & Walnut Salad

A fresh, zesty but still ever so slightly spicy easy salad recipe. This simple salad provides a balanced meal in terms of macros and a wide range of vitamins and minerals to keep you satisfied but still healthy without being too heavy in the summer months.
