
.I know you’re supposed to ‘eat the rainbow’ to ensure you have a balanced diet in terms of vitamin and minerals, but there’s something so satisfying about a plate of green. It’s like a green smoothie or juice, just looking at it makes you feel healthy. That’s how I feel about this bowl. I know courgetti isn’t as hyped up as it used to be, largely because people realised that a courgette doesn’t actually taste like pasta. BUT, if you take this courgetti recipe for what it is, it’s actually a great meal. When I first started eating a vegan diet (4 years next week!!) I used to eat this dish a lot, so this one really takes me back.
Green vegetable courgetti – not too heavy or starchy, full of vitamins, and not pasta. But in the height of summer, do you really want a huge bowl of pasta?
Seasonal Ingredients
As you can see by the title, this recipe is a seasonal one. Lots of greens come into season in late spring, so this one is perfect for this time of year. I’m going to try to keep this section brief in this post as the whole premise of this dish is that you can throw just about anything you want in and it works. Having said that, for the ingredients I’m listing below, several are currently in season. Most importantly, courgettes come into season in June and stay in season until September/ October. Asparagus is at the end of its season, being a true spring vegetable, its prime month is April, reaching the end of its season in June. I used frozen peas here, so the season is less important, but their season begins in May.
Nutritional Information
In total, this recipe contains 10g fibre 12g protein, over 200% of your required vitamin A (40% retinol equivalent) and over 150% vitamins C and K.
The peas and courgette are the main sources of vitamin A. Broccoli and asparagus are the main providers of vitamin K and broccoli is also the main provider of vitamin C.
Green Vegetable Courgetti Recipe
This recipe is the perfect quick meal, as all you have to do is chop and lightly stir fry a few vegetables. It can be pan to plate in less than 10 minutes.
As for spiralising the courgette, I bought mine on Amazon for around £4/5, but most supermarkets also sell packs of pre-spiralised vegetables now.
You can opt for any pesto of your choosing, whether that be store bought or homemade, but I think this one would work really well with this dish.
Suggested Recipe: Kale and Pistachio Pesto
Of course, I’ve deliberately kept mine very green, but this can be easily adapted to add any vegetables of your choosing. It’s also a great one for using up any leftover vegetables you have in the fridge.
This recipe is gluten free, dairy free, soy free (depending on pesto choices) and vegan.

Green Vegetable Courgetti Recipe
This spring recipe is full of vitamins and a perfect light dinner option for hot days and small appetites.
Ingredients
- 1 medium to large courgette spiralised
- 100 g asparagus tips
- 100 g tenderstem broccoli
- 50 g string beans
- ½ cup frozen peas
- 2 cloves garlic
- Pinch of chilli flakes
- 1 heaped tbsp pesto
Instructions

Lightly sauté the garlic, with a splash of water in a wok on medium heat for 2-3 minutes. Stir in the chilli flakes.

Add the broccoli and asparagus and cook for a further 3-4 minutes. Then add the frozen peas, courgette and string beans and stir fry for anther 3 minutes until all vegetables are cooked but still slightly firm.

Reduce the heat and stir the pesto through for one final minute before serving. Add a pinch of black pepper and serve.
Serve and enjoy!

This meal looks incredibly fresh! The other day, I went out for lunch with my sister. I ordered a zucchini bowl with lemon herb chicken, asparagus and tomato. I was very pleased with how I didn’t missed the pasta. I never heard of courgette before but it does look like pasta, so I’m open to trying it too! Thanks for the suggestion.

They sell spiralized courgette’s ( or zucchini as us Americans call it) at Whole Foods, and I’ve saved so many recipes like this one on my Pinterest before, but I still haven’t tried one yet! This one is definitely sooo green, and I so wanna try it out 🙂

I love that this dish is all about greens! Mmm, this would be great for meal prepping. I realized through your posts when vegetables are in season and it definitely matches with the color – like spring is greens while fall tend to have more orange foods. . .
