

This mint greens recipe was the final recipe I made for Recipe A Day May this year. The majority of the others were long finished and scheduled, this one was finalised in late April. Read: SPRING. It’s fresh, healthy, green and perfect for so many different things.

I’d initially planned to make this with some grains to make it into a full salad, then that didn’t work for my meal plan that week and ended up serving this as a side dish for something else that needed using up. But that made me realise just how versatile this could be. Serve alone to add as a side salad, serve with beans or lentils to make a healthy protein bowl, as I’d originally planned with grains. The minty and limes give this dish the perfect fresh flavour for the warmer weather.
You could technically serve this hot or cold, I’m not a huge fan of cold asparagus or spinach (cooked), so I’d personally have this warm, but if you don’t mind those things chilled this dish could work either way.
You’ll see down below that I’ve listed the greens and the dressing as separate components because I thought people might like the idea of serving the dressing over other things too, so I’ve tried to make it as simple as possible to follow that recipe alone as well as part of this dish.
Nutritional Information
As mentioned above, I’ve calculated the nutrition for the greens and dressing separately, just in case anyone wanted to make either of them alone.
So, briefly, the overview for the two combined is as follows – 8g fibre, 7.2g protein, full RDA of vitamins C, K and A. there’s 8.9mg of iron, which is the full RDA (8.7mg) for all men, and women over 50 and roughly 60% of the RDA (14.7mg) for women 18-50.

The Greens
Each serving of the greens contains 4.5g of fibre, 5g of protein and 3.5g of fat.
You get your full RDA of vitamins A, C and K, as well as 40% of your daily folate. There’s 3.2mg of iron per serving, and 14% of your daily calcium. People tend to forget that leafy greens are a good source of both of those things and that’s quite a significant amount of both considering we’re talking about an 80 calories side dish.
Mint Dressing
From the dressing, you’ll get a further 3.2g of fibre and 2.5g of protein. This dressing also provides 14% of your daily calcium, and 5.7mg of iron. In terms of vitamins, you get 20% of your vitamin E, your full daily vitamin K and an eighth of your daily folate.
Mint Greens Recipe
Buttery mint greens recipe in a fresh mint dressing, with the perfect blend of sweet and sour components.
This recipe is gluten free, dairy free, nut free and vegan. It does contain soy.

Mint Greens Recipe
Ingredients
- 100 g tenderstem broccoli
- 100 g asparagus
- 50 g green beans
- 100 g spinach
- 3 cloves garlic thinly sliced
- Generous amount of black pepper
- 1 tsp vegan butter
Dressing
- 2 tbsp olive oil
- 1 tbsp white wine vinegar
- 1 tbsp tamari
- Juice of half a lime
- 1 tsp maple syrup
- 1 cup packed mint leaves washed
Instructions

Heat a large frying pan on low – medium heat. Once hot, add the vegan butter and wait for it to melt. Lightly tilt your pan to ensure it has spread evenly across the base of the pan.

Add the garlic and cook for one minute, stirring often. Then add the black pepper, broccoli, asparagus and green beans. Increase the heat to medium and cook for 4-5 minutes, stirring regularly.

Once all of the vegetables are cooked, add the spinach and cook for a minute or so until it has fully wilted, stirring constantly.
Dressing

While the greens are cooking, make the dressing.

Wash your mint then place it in a blender. Don’t dry it off first. Add all remaining dressing ingredients and blend until fully combined.

Once the greens are cooked, put them in a bowl and toss them in your minty dressing.
Serve and enjoy!

The dressing and mint greens combo sounds great for summer. I have always seen broccoli stem and wasn’t sure how to cook it. This recipe should be awesome for that! Thanks

Not even joking, I clicked on this recipe and my stomach grumbled. It looks super good! I’ve never tried mint dressing but I do like experimenting with my greens so I will try this!
