So, spring is here, what’s in season in April? Much like March, April is a little sparse on the ground when it comes to fruits and vegetables in season in the UK, but there are a couple of very commonplace foods coming into season too. It’s not quite as lacking as March, and one of the things coming into season is the new potato, an ingredient that’s about as versatile as it gets.

Ingredient of the Month
It was tough choosing an ingredient of the month this month, my initial plan was asparagus. I’m a fan and don’t eat enough of it when it’s in season. However, even in season, it isn’t the cheapest of ingredients compared to something like the humble potato. And one of the main reasons for doing this series is that eating seasonally is both better for the environment and cheaper. So, this month I’m going to do something a little bit different.
Asparagus is going to be my ingredient of the month, but I’m going to make it so that every other ingredient in the recipe is also in season, with the exception of maybe some fresh herbs and the use of store cupboard ingredients like beans/ lentils.
Recipes to try this month
And while we’re waiting for the asparagus recipes to start appearing, here are some other recipes in season this month to keep you going for now.
Buttery greens recipe in a fresh mint dressing, this recipe contains asparagus and tenderstem broccoli, which you could switch for purple sprouting while it’s still in season.

Perfect for right now, with new potatoes and asparagus.

I know a lot of people don’t buy into the concept of ‘courgetti’, but I really like it as a lighter option on a warmer day. I’m typing this as it’s two degrees outside, so not the most springlike, but maybe one to add to the list if it does warm up a little (or a lot) over the next few weeks.

A really simple side dish that can be served hot or cold.

What’s your favourite ingredient in season this month?
Until next time,
Sophie
This seems like a fun challenge – although I have to confess I don’t like asparagus, haha! I’ve certainly never encountered a potato I didn’t like!
Hope you’re having a good weekend. It’s a nice relaxing one here.
One fruit I highly disklike is kiwi, but we have made a salsa using them and I am almost fully sold! I need to try them now that they are in season though x
OMG your healthy food porn photos made me SO hungry!!

I LOVE asparagus, my parents grow it so there’s always some going! Spring greens are an all year fave too, I fry them lightly in the tiniest bit of oil with garlic and chilli and its delicious! (that’s my tea tonight now you’ve reminded me of it!)
