

Welcome to my final Recipe A Day May for 2021! I feel like I’m the last person on earth to try this out, I’ve been seeing cauliflower popcorn recipes floating around for what feels like forever. But, one day I was scrolling through Pinterest and saw a few in a row and decided it was finally time to give a popcorn cauliflower recipe a whirl.
Why did none of you tell me to do this sooner?? It was delicious, if I do say so myself. Initially I had some concerns about getting the batter right consistency as it’s gluten free and GF flour can be more dry than regular plain flour. But after a little bit of this and a bit more of that, I finally got there.
I’ve definitely mentioned this before, but I love cooking with cauliflower because it’s so great at absorbing and taking on the flavour of whatever you’re cooking with. It truly is a blank canvas ingredient, but that makes it perfect for a dish like this.

Nutritional Information
Per serving (1/2 recipe), this recipe provides 8g of protein and 7g of fibre.
Each serving provides your full recommended daily amount of vitamin C, half of your daily vitamin K and 50% of your daily B5 and B6.
This recipe provides a range of other B vitamins too, with approximately 20% of the RDA of B1, B2 and B3 per serving. As well as just over 40% of your daily folate.
Popcorn Cauliflower Recipe

Delicious popcorn cauliflower recipe in the style of KFC popcorn chicken. Each layer is filled with that classic salty paprika seasoning to ensure you get the perfect balance of flavours in every bite.
Below you’ll find instructions for frying them, the more traditional way and for baking them, if you’d prefer a slightly healthier verion. The ones shown in the photographs have been fried rather than baked.
This recipe is gluten free, dairy free, soy free, nut free and vegan. Remember to check your breadcrumbs for potential allergens.

Popcorn Cauliflower Recipe
Ingredients
Cauliflower
- 1 small head of cauliflower
Batter:
- ½ cup GF plain flour
- ½ tbsp Schwartz chip seasoning
- ½ tbsp chilli powder
- 1/3 cup water
- Pinch of salt
Breading:
- ¾ cup GF breadcrumbs
- ½ tbsp smoked paprika
- ½ tsp ground cumin
Instructions

Take the cauliflower and break it into small florets.

In a bowl, mix all of the batter ingredients and whisk until completely smooth.

Mix the breading ingredients in a separate bowl.

Take each floret and dip into the batter, then the breading. Make sure it’s well coated, repeat the dipping process if necessary.
If frying

Add a pan of a neutral cooking oil (like sunflower) to a medium heat to get it up to temperature, ready for frying.

Add approximately 4 or 5 pieces to the pan of hot oil, be very careful as you’re placing them in the pan and cook for roughly 5 minutes until the batter/ breading is evenly cooked. Repeat until all of the florets are gone.
If baking

Dip each floret into oil then place on a baking tray in the centre of the oven for 15-20 minutes.
