
I’ve done a lot of what I eat in a days, but last month I found myself in a situation I haven’t been in for a long time – I had no food content to make. And my everyday life revolves around food. Running a food blog, my meals are often dictated by what recipes I’m working on rather than any particular craving or preference. I spend a lot of time thinking about food content, even if I’m not actively making it. So I decided to document what I eat in a week when I’m not really thinking too much about food.
As you guys know, I just finished Recipe A Day May, which I managed to complete in April for the first time in the three years I’ve been doing this series. I spent the first week of May planning my June content, but after that I pretty much had the rest of May to eat without thinking too much about it for the first time since I started posting recipes.
I almost forgot how to do a meal plan that didn’t begin with a list of recipe posts I wanted to work on that week, but that’s a different post completely.
In a truer than true what I eat in a day, this is what I eat in a week without any content obligations. We were still under lockdown at this point so there may be a few things that I would have eaten differently if the food availability was different, but you get the gist. But I thought that without the option of going out, and not making any recipes, this would probably be a good insight into what my natural diet is like when I’m not spending too much time thinking about food. And I also understand that by deciding to do this post this is still technically for content purposes too but it’s different.
How I Eat
For those who don’t know, my diet is gluten free, vegan and coconut free. I’ve previously done a post about why I eat the way I do if anyone has any further questions about that. I also typically eat in a more intermittent fasting style way. This isn’t for any diet reasons; I just don’t like eating first thing on a morning, so a lot of these days will start later. If I do feel like eating earlier, I do eat, but most days breakfast is around 11am. For that reason, I don’t eat lunch. I usually have my breakfast, a snack or two, then an evening meal. What I Eat In A Week
Day 1
Breakfast – Cherry smoothie bowl topped with granola, chia seeds and a little peanut butter

Snacks – about half a bag of strawberry Urban Fruit. A bag of salt & vinegar kettle chips
Dinner – Roasted chickpea salad wrap with salsa and homemade tortilla chips.

Day 2
Breakfast – Berry oatmeal
Snacks – almonds, homemade GF bread. This is the day I made my gluten free loaf that I featured in my ‘finding the best gluten bread recipe’ post, so obviously it had to be sampled when it came out of the oven.

Dinner – Tomato & lentil soup with roasted chickpeas. Welcome to a classic easy protein boosting dinner option in the glow kitchen.

Day 3
Breakfast – Yoghurt & berry bowl with granola. This is one of my favourite between seasons breakfasts. The berries are hot, the yoghurt is chilled. It’s easy, you get a little protein from the yoghurt and chia seeds, some fruit, and some healthy fats from the chia seeds and granola. It just works as an easy balanced breakfast option.

Snacks – Nakd bar
Dinner – Quick veggie stir fry with rice. Basic Sophie came to the table tonight. This is an ultimate I want to be healthy but also can’t really be bothered option.

Day 4
Breakfast – Same as the previous day!
Snacks – Slice of toast from my loaf I mentioned the other day.
Dinner – My go-to vegan salad recipe. I eat this salad a lot. When I’m in a regular week and I do have food on the brain 24/7, I don’t repeat old meals often because I’m constantly trying new recipes or adapting other ideas I’ve got. So a recipe has to be a very firm favourite for me to repeat it often. I probably eat this salad once every 10 days or so – firm favourite.

Day 5
Breakfast – Nutella smoothie bowl. I already have a recipe post on this so I won’t go into detail explaining it.

Snacks – An apple, some almonds.
Dinner – A very sloppily presented version of my bean quesadillas recipe.

Day 6
Breakfast – Lentil pasta. I’m not explaining this. If you know, you know. If you don’t know, read this. While my lashes did grow back, I ate my hair growth diet for so long that some habits still stick with me. Including having a bowl of lentil penne for breakfast. I don’t do this 5 or 6 days a week as I did when I was on the hair growth diet, but once every week or 10 days…old habits die hard.
Snacks – Nakd bar and an apple.
Dinner – This is sort of Mexican Patatas Bravas kinda thing? Also known as something you throw together to use what’s left the night before the food shopping arrives. Potatoes roasted in Mexican spices, with enchilada sauce and black beans.
Day 7
Breakfast – The same cherry smoothie bowl as day 1!
Snacks – Cookie dough balls…This is where my week fails. The cookie dough recipe was a popular one last month so I’m sure some of you have seen this. This recipe wasn’t in the original 31 I’d scheduled for May but I was planning on remaking one of them because I wasn’t keen on the photos. Before I’d had chance to reshoot that recipe, I made the cookie dough, fell in love with it and the original post got bumped to July and this one took its place in my May schedule instead.

Dinner – Jamie Oliver’s Minestrone Soup. And I’m cheating here because, despite the best intentions of making this a week without any meals for content purposes, this was actually for an ad I did last month. But we made it to the last day without me making something with the primary purpose of taking a photo which, to be honest, is quite an achievement for me.

This was an interesting one for me. A lot of my meals were lazy options because I’d just finished scheduling a month of daily recipes, and my culinary fatigue definitely shows here. But what do you guys think of my week? Do we eat many similar things?

I love reading your posts because as a vegetarian, your posts inspires me to bring some creativity into my cooking, plus your meals are so healthy! I also don’t like eating the first thing in the day so I too end up eating my breakfast around 11 am thus skipping lunch. This wasn’t the case previously when I had to go to work early morning but since now since I work from home, my diet has changed tremendously and I feel less bloated so yay! xx

This was fun! I eat quite a lot of stir-fry, so we had that in common this week. We also tend to batch cook quite a lot, so a week of meals for me tends to involve a lot more repetition than this!

I am a huge fan of morning smoothie bowls – they are so easy to put together and often contain great benefits on a nutritional level. Plus, I’m a BIG berry lover, and it’s so easy to incorporate my love of those flavours in! Without sounding crazy, I always find the meals you do for breakfast catch my attention. I can’t not have breakfast but I get so lazy and never really have enough nutrition/fill me up, but yours always look nutritional, filling and delicious. The berry and yoghurt bowl sounds amazing!

You eat so well, I tend to have a late breakfast most days as well at the moment, purely because I’m having to work from home so I only get up 15 minutes before the start of my shift and I just don’t get time to eat until I can take a break which sometimes is difficult! Everything you’ve eaten in a week looks very delicious though!

I’ve been wanting to zhuzh up my eating habits lately because I’m getting a little tired of the same old healthy recipes I always stick to. (Once I like something, I eat it til I get sick of it haha.) I’ve only attempted smoothie bowls a couple of times, and I want to try different flavours. The colourful salad is also reminding me that I want to try out different greens!
