
When I decided to focus on oils this month, I knew I had to make a pesto recipe. They’re so easy to make and it’s great how you can choose your oils and nuts and make them as nutritious as possible, even despite the high fat content. Today I’m sharing this lemon and olive pesto recipe because, guys, I’m so bored of basil. It’s great. But I’m getting sick of it, and I don’t know if it’s because we’re entering spring, but I’m obsessed with anything lemony right now.

Nutritional Information
I used some of the Pimp My Salad Cashew Parm in this recipe and that contains cashews and nutritional yeast, unfortunately their packaging doesn’t provide any vitamin or mineral data, so a lot of the nutritional goodness in this recipe can’t be tracked.
The information below, in terms of vitamins and minerals is a minimum, it definitely contains more than what’s listed.
I hate figuring out serving sizes for things like this. At the end of the day, the amount you use varies massively depending on how you’re using it. A bowl of pasta is going to use more than a tiny bin a wrap, and both are valid serving suggestions.
Serving Size?
This recipe makes approximately 8 heaped tbsp of pesto, which works out at 123 calories per serving. As that’s roughly the same as store bought pesto, I’m working on that being a serving size for the sake of calculating the nutrition. Obviously, use as much as you want/ need.
Nutrients from fat content
Each serving contains a quarter of the RDA of vitamin E and 40% of the RDA of omega 6, as a minimum. As the parmesan contains both cashews and sunflower seeds, this will definitely be higher. The nutritional yeast in the parmesan will also provide smaller amounts of several B vitamins.
Vegan Lemon & Olive Pesto Recipe

A fresh and zesty pesto recipe, ready in less than 5 minutes and a great alternative to traditional flavours for spring and summer.
This recipe is gluten free, soy free, dairy free and vegan. It does contain nuts.

Vegan Lemon & Olive Pesto Recipe
Ingredients
- ¼ cup sunflower oil
- 50 g vegan parmesan
- 1 cup of pitted queen olives
- Juice of one lemon
- 1 tbsp dried rosemary
Instructions

Add all ingredients to a blender or food processor and mix until smooth.
Serve and enjoy!

There is no doubt basil is powerful stuff. I enjoy it in pasta and with tomato/mozzarella stacks, but I love this creative olive and lemon pesto! I feel you on lemon tasting and smelling of spring; I just made lemon loaf cake today. 🙂

I love having pesto with my pasta, I usually have a pesto and broccoli pasta and it’s probably one of my favourite meals. I have never thought about making my own pesto before though so this has given me some inspo! xx
