Today I’m sharing the story of my biggest kitchen fail to date. My worst baking disaster ever, by a mile. Just FYI, this happened two days ago. This is not a tale of times gone by.ย So, why am I sharing this complete failure?ย The essence of relatability I guess. In this world where every photo isย staged and we try out best to make everything look as good as possible, I think itโs important to share that it doesnโt always go that way.ย
I want to clarify this early on, just for the sake ofย the thousands of people who have made/ or are thinking about making a recipe of mine, this flop came from trying to follow someone elseโs recipeย not my own.ย It was a random recipe Iโd found online, Iโd never made any of this personโs recipes before. But I donโt want to name and shame from one bad experience either.ย ย
However, here’s a vegan red velvet cake from a food blogger who I’ve had nothing but good experiences with in the past.
What was I making?ย
It was my mumโs birthday yesterday! And I make a cake every year. This year, I was thinking red velvet. I wasnโt sure whether to go for a cake, cupcakes, a loafย or red velvet brownies but Iโd settled on my theme. In the end, I tried to follow a red velvet brownies recipe. That recipe contained gluten, so I was making a couple of smaller changes, but they shouldnโt have made much of a difference. I was swapping a cup of plain flour for a mix of GF plain flour and oat flour, Iโd kept everything else the same.ย So, there would maybe be a slight change in texture, but nothingย crazy.ย ย

My Baking Disaster – A Series of Unfortunate Events
What went wrong?ย
Guys, EVERYTHING. I was a little thrown by the recipe to begin with. The basic brownie ingredients werenโt anything like my regular method, but I trust the process. Sometimes with baking things donโt make sense and then they magically do somehow. So, I went along. Everything was fine. The brownie batter was a bit thinner than mine usually is, but it still looked like it would work out.
The recipe was supposed to take 35 minutes. I checked it somewhere between the 30-35 minute mark to see how it was doing, if it was going to need longer etc. The top was cooked perfectly. And the brownie batter was still a liquid sloshing around underneath. It was visibly thicket than when Iโd put it in, but no more than a third cooked. But that sheet on the top layer was a perfectly thin crisp that was ready to burn if it had much longer than another 5 minutes.
How do I fix this?
Okay, forget the recipe. Sheโs not working for me. It was time to use my own brain and figure this out. Looking at the mix and texture, I decided my best bet was to turn the oven up a little and spoon the mix into cupcake tins and try to make individual fudgy brownie cupcake ish things. I still wasnโt convinced it was going to work, but it was the only thing that I thought might.
Oh and at this point it was also very obvious that there was literally nothing at all red about my red velvet. This mix was brown. Yet another disappointment.
So, I lined up some cupcake foils.
As Iโm scoping out the mix, I can seeย where the oil in the recipe has separated andย thereโsย a poolย of oil sat on top of my greaseproof paper. It keeps getting better…ย

And then, through 100% my own fault, the situation went from bad to a complete disaster. Iโm not sure if I caught the lip of my case tray on the shelf of the oven, or whether Iโd put it on the shelf at a bad angle. But as I was putting them in the oven, the tray toppled over and cake batter was suddenly all over the inside of the oven door, the floor, the bottom of the oven. Everywhere?
And then I had to make it again
Obviously, this was a birthday cake. If Iโd been making regular recipe, Iโd have quit for the day. But that isnโt an option when thereโs an occasion to cook for. After spending far too long cleaning the kitchen, a dog walk was completed then another cake was made.
This time Iย ditched the idea of following a previously untested recipe and figured it out for myself. Theย result went down well (recipe coming next week).ย ย All was recovered in time for the celebrations.

In case anyone has had any kitchen disasters recently, I hope this makes you feel a. But better about life. I still have no idea what went wrong with the original batch. Nothing about how badly wrong that went makes sense from a โthis is how cakes workโ sense. But things donโt always go to plan. Clearly. And thereโs always room for your next attempt to be better.
If anyone feels like sharing some fails of their own down below,ย please let me know your kitchen fails too.ย ย
Until next time,ย
Sophieย
Oo yes I’ve had my own cake fails before so don’t worry! I always call them tasty experiments unless it can be saved like your cake mix! LOL! We live and learn I guess! Xo
This is totally normal and it happens to all of us. Glad you were still able to make a cake even though it takes a second try and a lot more time.

Oh no! Poor you! It’s always when you’re making it for an occasion that it goes completely wrong, isn’t it? Hopefully the dog walk helped just rid you of any frustration from it all. The end result looks gorgeous!
I have had my fair share of baking disasters too, but we learn something from all these, isn’t it! I’m glad you ended up baking another cake which turned out amazing!

Oh no! But the new one you made looks great! Sometimes your own instincts do know best.
Oh no! That’s horrible! I have not had good experiences following ‘vegan’ recipes, I tried many and all were rather bad until I bought this vegan cookery book (Vegan Comfort Classics). I only generally bake vegan food for a few of our friends. Otherwise, I write my own recipes.

Means so much to me that you are sharing a fail like this! I have had some baking soda-y explosions, some burned bits, and even some bad recipe flops too.
I am ultimately grossed out by that photo of the mix separated from the oil, but I connect with the frustration of being led on by a bad recipe. Love that you regrounded yourself and went in again, this time turning out a mouth-watering cake that is making me hungry!
Keeping cooking. >3
Omg! This was insaneeee!! Good job at fixing the issue!

Yikes, those first photos are a real sight. I am so glad you tried the second time. There really is something to be said about not giving up. Sometimes I have to make a new recipe I am creating 8-10 different times before it is good enough to post!
I am so glad you made it again and never gave up It looks amazing happy birthday to your mom Cris

Yikes! I think I would have cried. So glad you got a cake baked for the birthday. What’s birthday without cake??
I’ve had baking disasters too. In fact, it happens when my friend and I were making cookies. We learned a valuable lesson about 1/2 sticks of butter and using them in a recipe. We figured out what was wrong and we got back to baking cookies. 15 dozen that day!
Oh no!! I’ve had so many kitchen disasters, it happens to us all haha! I’m glad that you got everything sorted in the end!

I love your finished result, well done! I often find with substitutions that they never quite go as well as I hoped – but sometimes you get lucky and the final results are still edible enough that you can enjoy them while you try again next time! I tend to stick to simple things like cookies as the success or failure is quicker than a cake to bake, I’m not a very good baker at all!
You definitely redeemed yourself with the cake you actually made ๐
Hope that you are having a lovely week ๐
I’ve had many occasions like this. Even when you bake a lot, a new recipe always has the chance of not working out.
Oh I’m here for the relatability, only a few weeks ago I made cookies and after being in the oven for ten minutes I realised I’d messed up. They’d spread out so much and they were melted hot lava on the bottom of the oven and I still don’t know where I went wrong! Haha I don’t get on well with baking, its just not for me! Ooops!
My kitchen fails usually usually involve accidently spraying the kitchen with flour when whisking! ๐
