This recipe is a really good one to make with kids as all of the prep steps are incredibly simple, and there isn’t really much room to go wrong. All it requires is a little bit of weighing, melting and mixing and some extra setting time.

The finished product makes a great snack, but could also be an easy grab and go breakfast bar or a healthier than average dessert. And yes, you can eat these on the go, the final product is easily eaten as a solid bar with no more than a few crumbs, despite how they look, these bars aren’t crumbly.

Nutritional Information
Each oat bar contains 2.2g of fibre and 4g of protein. As for vitamin content, each bar contains 17% of your daily vitamin E (possibly more depending on the origin of your vegan butter) and 16% of your daily vitamin K.
Storage and Keep
I prefer to store mine refrigerated because I prefer the texture of the middle layer when it’s a little more solid, but they don’t necessarily have to be if that isn’t your preference. Just make sure they’re somewhere cool, out of direct sunlight and stored in an airtight container and the bars will last at least a week.
Substitutions
If you’re not gluten free and want to make this recipe slightly cheaper, you can swap the GF oats for regular rolled oats.
The nut butter can be swapped for wow butter to make it nut free. Alternatively, you should be able to swap it for a seed butter if you want to. I haven’t tried this method, but providing the general consistency is similar, it should work.

This recipe is gluten free, dairy free, soy free and vegan. It does contain nuts in the nut butter, but you can swap that for something like wow butter to make this recipe nut free too.

Chocolate Oat Bars Recipe
Ingredients
- ½ cup vegan butter
- ¼ cup brown sugar
- 1 ½ cups GF rolled oats
- ¼ cup dark chocolate chips
- ¼ cup unsalted peanut butter
Instructions

Line a 4-inch square baking dish with greaseproof paper and set aside. Overhang the edges to lift the bars easier from the baking dish.

Melt butter and brown sugar in large saucepan over medium heat, until the butter has melted and the sugar has dissolved, then mix in the oats.

Reduce to low heat and mix until ingredients are well blended.

Pour half of the oat mixture into the prepared baking dish. Spread out the mixture evenly, pressing down. Reserve the other half for second layer.

To make the filling, melt the peanut butter and chocolate chips together in a small microwave-safe bowl and stir until it’s smooth. Mine took just under a minute in the microwave.

Pour the chocolate mixture over the crust in the dish.

Pour the remaining oat mixture over the chocolate layer, pressing in gently.

Refrigerate 2 to 3 hours or overnight.
