For those who donโt know what Iโm talking about,ย every year to celebrate Wimbledon, I do two weeks of Wimbledon inspired strawberries and cream recipes. This year, Iโm starting with this strawberry scones recipe. I couldnโt think of aย more quintessentially British dishย to start with.ย ย
I made some vegan and gluten free scones as a recipe a day May recipe last year, but these ones are aย slight upgrade. This year I had access to the Flora Plant Butter, so these ones are richer with a more realistic all butter texture.ย Theyโre made with a sweeterย base scone recipe, to get that soft hunt of vanilla creaminess throughout, combined with some strawberry Urbanย Fruit.ย ย

Afternoon Tea?ย ย
So, you have your scones, you have your jam ready to go. But you canโt seem to find any vegan cream thick enough to use or donโt have the time to whip some up? As a very quick photo fix, I used the Nush almond milk creamย cheeseย with my jam here and that was possibly the best decision ever. I know thatโs not the norm and the more traditional of you probably hate me for saying it, but please try it for yourselves.ย ย

This recipe contains 3g of fibre and 4g of protein per scone. Each scone also contains one eighthย of the RDA of vitamins B1 and B6 and a tenth of your daily B3 and B5.ย ย
GF Vegan Strawberry Scones Recipeย
Anย all butterย style vegan and gluten free strawberry scones recipe with healthy Urban Fruit pieces.ย ย
This recipe is gluten free, dairy free and nut free. It does contain soy.ย

GF Vegan Strawberry Scones Recipe
Ingredients
- 1 cup GF self raising flour
- ยฝ cup GF oat flour
- ยผ TSP salt
- 1 tsp baking powder
- 60 g vegan butter
- 2 tbsp caster sugar
- 3/8 cup vanilla soy milk
- 75 g urban fruit strawberry
Instructions

Preheat the oven to 220ยฐC

Sift the flour into a mixing bowl and add salt and baking powder.

Add the vegan butter and rub in with your fingers until the mix is crumbly.

Add the caster sugar.

Then add the soy milk and mix in with a spoon, then stir in the Urban Fruit.

If the dough is too sticky at any point, add more flour. The perfect texture is a tiny bit sticky, so you get a little on your hands but still very easy to shape and be easy enough to move around on a clean surface.

Use your hands to shape the dough into little balls and then flatten the top and bottom โ makes around 4 scones

Bake in the oven for around 20 minutes until browned and an inserted skewer comes out clean

Leave to cool slightly before slicing in half to eat
Serve and enjoy!

I enjoy scones for breakfast and, with jam, cream cheese, or butter, nothing beats them! I like them warm out of the oven as opposed to toasted, and love that your recipe can easily be whipped up in the morning.

Yum! These scones look delicious, Sophie! I think strawberries are the perfect fruit for making scones. If you’re able to grow a few strawberry plants in your garden or even in a strawberry pot, you’ll have the freshest berries to use in your scones. Plus, you’ll save money!
