
Happy final day! My sixth and final strawberries and cream recipe is here in the form of these strawberry white chocolate blondies. When I sat down to make my list of potential recipe ideas for this series, I thought about a vegan Victoria sponge. Wimbledon is classically British, as is a Victoria sponge and it’s a very classic strawberries & cream recipe. But, as I’m sure you know by now, I like trying things that are new. And as nice as a Victoria sponge would be, it felt a little too safe. So, while I was thinking about alternative cake ideas, this one cropped up.
I’ve never made regular blondies before; I always make chickpea blondies. However, I do make a lot of brownies. This recipe is a twist on a few of my previous brownie recipes combined. I decided to make the strawberry element a jammy texture rather than strawberry pieces, so I looked to my cherry pecan brownies to get an idea what kind of ratios I’d need.
Ingredient choices
All of my brownie recipes follow roughly the same flour to melted chocolate ratio + cocoa/ raw cacao. Initially, I thought the adaptation would be really easy. Then I realised I’d need to sub the cocoa powder to keep the same texture. I didn’t want to use less milk or chocolate as that would reduce the creaminess, so I added slightly more flour and a little bit of corn flour. Adding too much flour had the potential to make them too dense and dry once cooked, so the corn flour is in there to help thicken the wet ingredients without drying them too much.
I found the blondie batter to be runnier than a typical brownie batter, so they do take ever so slightly longer to cook. Don’t be alarmed if it doesn’t look exactly how you’d expect when it first goes in the oven.
Strawberry White Chocolate Blondies
This recipe is gluten free, dairy free, vegan and nut free. It does contain soy. Creamy white chocolate blended with a gooey strawberry jam to create a deliciously soft strawberry white chocolate blondie.

Strawberry White Chocolate Blondies
Ingredients
For the blondies
- 190 g GF oat flour
- 160 g golden caster sugar
- ½ tbsp corn flour
- 175 g dairy free white chocolate
- 4 tbsp sunflower oil
- 1 cup vanilla soy milk
- 1 tsp vanilla extract
For the jam
- 200 g strawberries
- 1 scant cup water
- 50 g golden caster sugar
- 2 tbsp chia seeds
Instructions

We're starting with the jam, then leaving that to set a little while we make the blondie mix. Add the sliced strawberries, sugar and water to a saucepan. Bring to the boil on a medium heat, uncovered. Then simmer for 12-15 minutes, stirring occasionally, until the strawberries have broken down into a jammy texture. Stir in the chia seeds then set aside for the jam to set. The jam won’t be fully set by the time we mix it in – don’t worry if it’s still runny. It’s easier to combine that way.

Preheat your oven to 180 degrees and line an oven friendly baking dish.

Melt your chocolate in a heatproof bowl over a pan of boiling water.

Sieve your flour into a mixing bowl. Once done, stir in the sugar until dry ingredients are fully combined.

Now stir in the melted chocolate, oil, vanilla, and milk until fully combined. You'll notice the mix is probably quite runny, stir in the corn flour now and mix until completely smooth.

Now pour just over half of your mixture into your lined baking dish, enough to get an even base.

Then place jam over this layer and lightly swirl through using a spoon. It should take about 5 heaped tablespoons to cover the bottom layer.

Pour the remaining blondie mixture into over the top of the jammy layer. As the mix is thinner, some of the strawberry layer should come to the surface.

Place on the middle shelf of the oven and bake for approximately 35 minutes. Remember blondies are still gooey when cooked, you’re not looking for a fork to come out clean like cake mix.

When blondies are cooked, allow them to cool and set for at least 5 minutes then slice into 10 pieces.
Serve and enjoy!
