

Spinach burgers? I know a lot of people will automatically scrunch their noses up reading this, and you know what? I get it. It’s bright green. But this spinach burgers recipe is amazing if you don’t actually like greens. It’s basically a spicy bean burger with a hot breaded coating. That probably sounds more appealing, right? You can’t taste the spinach here, but it’s a great way to get in all of the added vitamins from the greens, and your food looks a lot more vibrant too.
I’ve made this version how I like to eat it, with the spicy breadcrumbs and the hot sauce as my egg replacer. But I know that some people prefer something milder or a little healthier, so I’ve included a variation for people who don’t want breadcrumbs, and a version without the hot sauce.

This spinach burgers recipe follows roughly the same structure as my chickpea nuggets recipe in terms of making a filling, then using a hot sauce and breadcrumbs to assemble them, so this method has been a go-to in my kitchen for years now. My nuggets were made before I became gluten intolerant, so there have been many changes on the breadcrumb front, which you’ll be seeing a recipe for soon. But I think the version used here is the perfect level of spicy enough to get the flavour, without being too hot with the hot sauce.

Nutritional Information
Each patty, with breadcrumbs and hot sauce, contains 9g of protein and 6g of fibre. Thanks to the spinach, you also get the full recommended amount of vitamin K, two thirds of the RDA of vitamin A, half of your daily vitamin C, and 30% of your daily folate.
Greens are quite high in iron too, making the total per patty 4mg, which is just under half of the daily recommended amount for men and women over 50, and just under a third for women 18-50.

Spicy Spinach Burgers Recipe

A delicious spicy bean burger with a spicy crisp breaded edge and the perfect way to hide your greens and sneak in some added vitamins.
Easy to meal prep in advance and can be frozen and stored for up to a month in the freezer, or 2-3 days in the fridge.
This recipe is gluten free, dairy free, soy free, nut free and vegan. Check your breadcrumbs for soy and nut content though!

Spicy Spinach Burgers Recipe
Ingredients
- 100 g fresh spinach
- 1 can haricot beans drained and rinsed
- ½ cup GF oat flour
- 1 flax egg optional
- Salt & pepper to taste
- 1 clove garlic roughly chopped
- 70 ml hot sauce
- ½ cup GF breadcrumbs
- ½ tsp mixed herbs
- Pinch of peri peri salt
- ½ tsp chilli powder
Instructions

Preheat oven to 190°c.

Place breadcrumbs, chilli powder, peri peri salt and mixed herbs on a baking tray in the centre of the oven for 5 minutes.

Meanwhile, add oat flour, garlic, salt & pepper, spinach and haricot beans to a processor. Process on high until a dough like texture is formed. You may have to scrape the sides down depending on your food processor.

Then shape the mixture into 3 even sized patty shapes.

When the breadcrumb mixture is ready, tip it into a bowl.

Dip the nuggets into the hot sauce, making sure they’re fully coated. Then roll them in the breadcrumb mixture.

Place the coated burgers back on the baking tray and place on the top shelf of the oven for 15-20 minutes until golden brown and hot all the way through.

Recipe Notes
Variations
To make this recipe the milder way, do not include the hot sauce. Instead, you’ll need a liquid egg replacer and the equivalent of two eggs. By a liquid egg replacer, I mean something like Crak’d or Ogg’s that you can dip your burger patties in before dipping in the breadcrumbs.
For the healthier version without the breadcrumbs, follow the instructions to make the patties, but also add to the mix the spices that you would have included in the breadcrumb tray and add a tablespoon of hot sauce to the mix if you’d like to keep the spice.
For a milder and healthier verion, still add the spice mix to the patties, but instead of hot sauce, add a flax egg to your food processor when making the patties.
