

When you have a classic cookie dough recipe that has nut butter as a main ingredient, and almonds are one of your favourite snacks, and cookies are one of your favourite things on earth to bake, you have to make a vegan almond cookies recipe eventually, right?
I know this is my second cookies recipe this month (this one is the last) and some people might think that’s overkill, but right now I want to make everything sweet into a cookie. They’re one of my favourite things to bake, and, maybe an unpopular opinion, but I think cookies are better than cake. Feel free to disagree with me there. If you didn’t catch the first one, I posted some s’mores cookies at the beginning of the month.

But these cookies have almonds in every bite. They have an almond butter base, and decided to add crushed almonds into the mix rather than whole, so you get a tiny bit of crunch in every bite.
I didn’t want to use ground almonds to mix into these like an almond flour, nor did I want to use whole almonds. So, I added my almonds to my food processor and pulsed them a few times until they became like little chips. Not fully ground, but small pieces. You could also chop them into smaller pieces if you’d prefer to skip that step, but the food processor saves time.

Nutritional Information
I think everyone knows that almonds are fairly healthy, and as this recipe contains almonds and almond butter, you get quite a lot from them. But that also means that the recipe is higher in fat; a lot of that fat is of the healthier variety though, don’t let the higher fat content put you off completely.
As I’ve already mentioned the vitamin, let’s start there, each cookie provides you just under a fifth (19%) of the RDA of vitamin E, which I think is pretty good for a cookie. You also get 15% of your daily vitamin D, and 1.6mg of iron.

Each cookie contains 3g of fibre and 4.4g of protein. As for the fat content, there’s 14g per cookie, 3.4g of which is saturated fat.
Vegan Almond Cookies Recipe

A nutty almond choc chip cookie recipe with an almond butter base and a slight almond crunch in every bite.
This recipe is gluten free, dairy free, soy free and vegan. It does contain nuts – obviously. I used a tbsp of soy milk in mine, but any dairy free milk will work here.

Vegan Almond Cookies Recipe
Ingredients
- 1 cup GF oat flour
- ¼ cup vegan butter
- ¼ cup almond butter
- 1/3 cup almonds
- ¼ cup vegan chocolate chips I used dark
- ½ cup golden caster sugar
- 1 tbsp of vegan milk
Instructions

Preheat oven to 180°c and line a baking tray with greaseproof paper.

Either chop the almonds, or pulse them in a food processor a few times until they’ve broken down, but not to the point they’re as fine as ground almonds

Mix your nut butter, vegan butter and sugar in a food processor until thoroughly combined and smooth. Add in the milk, and continue to mix. Slowly add in the flour, bit by bit, until combined and smooth.

Add the almonds and chocolate chips and pulse a few times until it’s evenly mixed into the cookie dough.

Spread the mix into 8 equal sized servings and roll each one into a cookie shape with your hands.

Place on the baking tray and bake for 15 minutes for hard outsides and chewy centres. Place on a wire cooling wrack to cool before serving.
