
Today I’m sharing a jackfruit recipe for the first time with this smoky shredded jackfruit recipe. This recipe was inspired by a burger recipe I saw online (hence the bun) but I wanted to make the meal more balanced with the addition of the beans and extra vegetables. But the end product is so versatile, you could use this mix in a burrito bowl, as a fajita filling, a topping for some loaded nachos – whatever you want.
Whatever you want includes the burger, although that can/ does get a little messy. And as my ingredient of the month is avocado, today I’m sharing the recipe in burger form with a lazy guacamole to add some healthy fats to the mix too.

I have a real love/ hate relationship when it comes to jackfruit. As many of you will know, I don’t eat fake meat. When I initially stopped eating meat, it was because I didn’t enjoy the taste or texture, not for any real ethical reasons. So, fake meat doesn’t appeal in any way. And jackfruit sits on a very fine line when it comes to meat alternatives for me. Jackfruit is incredible to cook with, it absorbs flavour really well, takes next to no time to cook and can be used for so many things, but the texture is very strange for a fruit and is almost a little too meaty for me. At least it is alone, which is why I think it works perfectly in a recipe like this with many other flavours and textures alongside it.
Nutritional Information
The following information is for the filling with the lazy guacamole, but without the bun.
Each serving contains 24.9g of fibre (99% RDA) and 15g of protein. It also contains a wide variety of vitamins and minerals, including the full RDA of several. Each serving will provide over 100% of the RDA of vitamins B1, B2, B6 and vitamin C, over 80% of your daily B3 and 50% of the RDA of folate and vitamin A.
446 calories per serving.

Ingredient Choices and Substitutions
If jackfruit isn’t your thing, the only real substitutions would be a meat alternative. And, of course, you can substitute the beans for any other bean of your preference, like black beans or kidney beans.
How to store and does it keep?
Personally, I think this one does taste better fresh, and with it being reasonably quick to make, I’d recommend making it when you’re ready to eat/ serve, but you can reheat this recipe either on the hob or the microwave if you need to.
Store in an airtight container and refrigerate any leftovers. Use within four days.
Heat the BBQ Jackfruit either on the hob in a saucepan or skillet over medium heat for 4-6 minutes or in the microwave in a microwave safe dish for 2-3 minutes. If you’re reheating on the hob, you may also need to add a tbsp or two of water.
Smoky Shredded Jackfruit Recipe
A quick and easy shredded jackfruit recipe, perfect for a variety of Mexican dishes.
This recipe is gluten free, dairy free, vegan, soy free and nut free.

Smoky Shredded Jackfruit Recipe
Ingredients
- 1 tbsp sunflower oil
- 1 red onion diced
- 1 pepper finely sliced
- 400 g jackfruit drained and rinsed
- 2 tsp mild chilli powder
- 2 tsp smoked paprika
- 1 tbsp BBQ nutritional yeast optional
- 1 can pinto beans drained and rinsed
Lazy Guacamole
- 1 avocado
- 2 limes juiced
- Chilli flakes to taste
- ½ tsp smoked sea salt
Instructions

To make the pulled jackfruit, heat the sunflower oil, red onions and pepper in a large pan over a medium-high heat for 5 mins, until the onion begins to turn golden and the pepper softens.

Add in the jackfruit, separating the strands with a wooden spoon. To get the jackfruit as shredded as possible, you may prefer to prep it on a chopping board using a fork and spoon to shred it before adding it to the pan.

Stir through the chilli powder, smoked paprika, and nutritional yeast (if using) then stir in the beans. Cook for 10 mins, stirring frequently.

In the meantime, prepare the lazy guac. Add the avocado and lime juice to bowl and mash with a fork until the avocado has softened and the lime juice is fully mixed in, then stir in your chilli flakes to taste.

Either serve your guac alongside or on top of your jackfruit and bean mix, or use it as a base layer if you’re adding it to a bun/ tortilla.
This looks so tasty! I totally agree with what you think about Jackfruit – every time I eat it, I get weirded out with the fact that it’s a fruit but looks and has the same texture as meat! I’m definitely going to try this recipe though!
