Smoky Shredded Jackfruit Recipe

Ingredients

  • 1 tbsp sunflower oil
  • 1 red onion diced
  • 1 pepper finely sliced
  • 400 g jackfruit drained and rinsed
  • 2 tsp mild chilli powder
  • 2 tsp smoked paprika
  • 1 tbsp BBQ nutritional yeast optional
  • 1 can pinto beans drained and rinsed

Lazy Guacamole

  • 1 avocado
  • 2 limes juiced
  • Chilli flakes to taste
  • ½ tsp smoked sea salt

Instructions

  1. To make the pulled jackfruit, heat the sunflower oil, red onions and pepper in a large pan over a medium-high heat for 5 mins, until the onion begins to turn golden and the pepper softens.
  2. Add in the jackfruit, separating the strands with a wooden spoon. To get the jackfruit as shredded as possible, you may prefer to prep it on a chopping board using a fork and spoon to shred it before adding it to the pan.
  3. Stir through the chilli powder, smoked paprika, and nutritional yeast (if using) then stir in the beans. Cook for 10 mins, stirring frequently.
  4. In the meantime, prepare the lazy guac. Add the avocado and lime juice to bowl and mash with a fork until the avocado has softened and the lime juice is fully mixed in, then stir in your chilli flakes to taste.
  5. Either serve your guac alongside or on top of your jackfruit and bean mix, or use it as a base layer if you’re adding it to a bun/ tortilla.
