
Before we get started, I’m going to warn you that this post has the potential to be really long, at least by recipe post standards. I started with one idea for how these bites were going to work, then I ended up realising I could customise them several ways and they all worked out. Turns out these peri peri spinach bites can be made different ways to make them healthier, spicier or both. As if ‘spinach bites’ didn’t sound healthy enough to begin with…
Seasonal Ingredients
Spinach was the seasonal ingredient in last week’s strictly seasonal as well so I don’t want to repeat myself too much. It’s rich in vitamin A, C and folic acid. And it contains smaller amounts of protein and iron. The cauliflower is also high in vitamin C and the chickpeas obviously add some extra protein.
Other Nutrition
This recipe contains flax seed. Flax seed in vegan recipes is often used as an egg replacement to bind the burger/ ‘meatball’ etc. This recipe doesn’t need the flax seed for that reason, it holds up fine without it. I wanted to include it though as the flax adds an extra nutty flavour dimension, and it’s really easy to get some extra omega 3.
5 Peri Peri Spinach Bites Recipes
Naked – These ones are literally just the spinach bites, lightly seasoned, not very spicy. They don’t have any breadcrumbs or coating but the outside does crisp up nicely in the oven.
Healthy – In this post, the photos are of naked and healthy. The ‘breadcrumb’ on the healthy version is actually cauliflower. Yes, we’re making cauliflower breadcrumbs now.
Regular – After the healthy explanation, you can probably already guess what regular is. These ones are coated in normal breadcrumbs, the kind not made from vegetables.
Plain (ish) or extra hot? – This step doesn’t apply if you’re leaving them naked, but if you’re making healthy or regular, they need to be dipped in something to make the breadcrumbs stick. For plain (ish) you can use a non-dairy milk, for extra hot you’ll be needing some peri peri sauce. Something like salsa would also work here!
Peri Peri Spinach Bites Recipe
This recipe is dairy free, nut free, soy free, vegan and can be gluten free depending on the breadcrumbs you opt for.

Peri Peri Spinach Bites Recipe | Vegan, GF
Ingredients
Naked
- 1 can chickpeas drained and rinsed
- ¼ cup GF oats
- Approximately 80g spinach
- ½ tsp Salt Pans Flor de Sal with Piri Piri
- ½ tsp chilli powder optional
- 1 tbsp ground flax seed
Lightly Spiced or Extra Hot?
- 100 ml of your liquid of choice non-dairy milk or a spicier sauce option
Healthy
- ¼ large cauliflower pulsed in a food processor until cauliflower rice has formed.
- 1 tbsp cornstarch
Regular
- ½ cup breadcrumbs
Instructions

Preheat oven to 180c, then add all of the naked ingredients to a food processor and process until fully combined. The mixture doesn’t need to be totally smooth, but shouldn’t be too chunky as this will prevent them from keeping their shape later.

Once combined, separate into 10 equal size portions and shape into nuggets or balls with your hands.
Naked

If you’re keeping them naked, add to a non-stick baking tray and place in the oven for 25 minutes until warmed through and slightly crispy on the outside.

Healthy

For the healthy nuggets, add your liquid of choice to a ramekin or small bowl. In another bowl, mix stir the cornstarch into the cauliflower until evenly combined.

Dip your ‘naked’ bites into the liquid, then press and roll them in the cauliflower mix until fully coated.

Place on a non-stick tray and repeat until all nuggets are coated. Cook on the middle shelf of the oven for 25 minutes.

Regular
-
Add the liquid of choice to a ramekin or small bowl.

Dip your ‘naked’ bites into the liquid, then press and roll them in the breadcrumbs until fully coated.

Place on a non-stick tray and repeat until all nuggets are coated. Cook on the middle shelf of the oven for 25 minutes.
Serve and enjoy!

i’ve never had these, and honestly never really thought of trying them. however, the regular ones do look pretty tasty. i’m very bad at eating my greens but i like that spinach doesn’t have much of a taste so this is something i would probably enjoy. great post’ xx

I am very intrigued by the cauliflower breadcrumbs, I actually hadn’t really looked into what the healthy alternative to breadcrumbs would be so this is really good to know. I am tempted by all of them I’m not going to lie.. they look and sound delicious, and I like the idea of having them like a nugget and dipping them. Yum!

Your Peri Peri Spinach Bites look delicious and beautiful with all the colors in them. I like how you added the flax seed. I would add it too. I would like to try the healthy version with the cauliflower breadcrumbs.
I actually do really like the sound of these! They sound like they could be used kinda like falafels and put in a pitta with some salad and houmous!

Spinach bites is a cool way to eat spinach besides adding it to pasta dishes, sandwiches and wraps! I never heard of cauliflower as breadcrumbs, how creative and super healthy coating. I’m not vegan but I’m always intrigued to try out your recipes
