
Yes, this is me talking about lentil pasta again. So, I’m sure by this point, most of you are well aware of the fact lentil pasta has become a dietary staple of mine since the saga with my lashes falling out. And I’m sure it will come as no shock to any of you that eating the same thing over and over again does get boring after a while. This spinach pasta recipe came from my desire to get some variation in there and a need for a few more vegetables.
Spinach Pasta Recipe
When I started eating pasta for breakfast, that obviously came as a nutritional sacrifice in some ways. Yes, it’s high protein, iron and some other vitamins I needed for my hair growth diet, but there’s no fresh produce in there. Breakfast before the pasta was typically a smoothie bowl or some Alpro yoghurt and fruit or something fresh in general.
I still wanted my pasta to be quick and easy, so I wanted a sauce that could be made in less time than it takes to cook the pasta. I didn’t want to make it too greasy or heavy, so traditional pesto was out, and I came up with this quick spinach sauce.
Seasonal Ingredients & Nutrition
This post is a strictly seasonal, so let’s quickly go over that before the recipe starts. Spinach is the seasonal ingredient here (shock) and it’s a great ingredient to add when you’re wanting a general nutrient boost. It’s high in vitamins A, C, and folic acid, as well as containing smaller amounts of protein and iron. Spinach has around 3g of protein per 100g, at just 23 calories. If this dish is served with lentil pasta, that brings the total protein to 25g per serving.
I made mine with lentil pasta (what else do I even eat at this point) but you could, of course, sub that for whole wheat or any other variety of your choice. This dish includes a dash of tamari or soya sauce, which I know is an odd ingredient to find in a pasta dish, but trust me. The saltiness of the sauce adds something to the depth of the other flavours, and there are no other added salts in there so it doesn’t ruin the dish from a health perspective either.
This recipe is gluten free, dairy free, vegan and nut free. If you needed to make it soy free, sub the tamari for some Himalayan sea salt and a dash of water.

Simple Spinach Pasta Recipe
Vegan friendly, gluten free spinach pasta reThe sauce Sauce is healthy and the full dish cooks in less than 10 minutes. Perfect for meal prep lunches or a quick dinner.
Ingredients
- 180 g Pasta of choice (dry weight)
- 100 g spinach
- Juice of 1 lemon
- 2 cloves garlic
- 3 tbsp olive oil
- Pepper to taste
- ½ tsp oregano
- A dash of tamari/ soy sauce
Instructions

Cook lentil pasta as per packet instructions

While pasta is cooking, add lemon juice, garlic, tamari/ soya sauce, olive oil and 50g spinach to a blender until smooth. Set aside for a few minutes.

In a separate pan, add the remaining spinach and a splash of water on a low heat and stir until wilted.

When the pasta is cooked, drain and stir in the wilted spinach and sauce. Add the pepper and oregano, stir and cook for approximately 2 minutes until sauce has warmed through.
Serve and enjoy!
