These peri peri spinach bites are quick and easy, vegan and gluten free, as plain or spicy as you like and a great healthy addition to any salad or pitta.
100mlof your liquid of choicenon-dairy milk or a spicier sauce option
Healthy
¼large cauliflower pulsed in a food processor until cauliflower rice has formed.
1tbspcornstarch

½cupbreadcrumbs
Instructions
Preheat oven to 180c, then add all of the naked ingredients to a food processor and process until fully combined. The mixture doesn’t need to be totally smooth, but shouldn’t be too chunky as this will prevent them from keeping their shape later.
Once combined, separate into 10 equal size portions and shape into nuggets or balls with your hands.
Naked
If you’re keeping them naked, add to a non-stick baking tray and place in the oven for 25 minutes until warmed through and slightly crispy on the outside.
Healthy
For the healthy nuggets, add your liquid of choice to a ramekin or small bowl. In another bowl, mix stir the cornstarch into the cauliflower until evenly combined.
Dip your ‘naked’ bites into the liquid, then press and roll them in the cauliflower mix until fully coated.
Place on a non-stick tray and repeat until all nuggets are coated. Cook on the middle shelf of the oven for 25 minutes.
