
This is exciting for a few reasons. 1) Remember last year when I shared my mum’s birthday cake? Well, it’s that time of year again (it was Wednesday). 2) I’VE FINALLY MADE GLUTEN FREE BROWNIES. My original brownies recipe is one of the only things I’ve made that I’ve struggled to make gluten free. They always either turned out too dry or didn’t rise or just weren’t quite right. Not this time. These vegan peanut butter brownies can rival any that contain gluten.
I’ve made a double recipe stack and filled them with peanut buttercream. I didn’t want to make a regular chocolate cake because I wanted that gooey brownie texture. And I didn’t see the point in making a fudge cake to have to slice it in half to fill it when I could easily make two batches of brownies instead.Â
They have a hint of peanut butter in the batter, a peanut butter swirl running through them. Then, I filled them with a peanut buttercream icing and topped it with chocolate buttercream. Â
I made the decision to make one batch, then make another batch while they were in the oven. That way they could stay on the same shelf in the oven, and I could ice the bottom layer while the top one was in the oven. Â

Vegan Peanut Butter Brownies RecipeÂ
The recipe below is for one layer, so please double it if you’re planning on replicating this as a cake rather than just a batch of brownies. I’m using peanut hottie, which I was gifted for a previous collaboration. I’m under no obligation to post/ use it here. You can, of course, use any brand of powdered peanut butter of your choosing. Â
This recipe is dairy free, gluten free and vegan. You could make it soy free if you switched to another non-dairy milk of choice. Â

Vegan Peanut Butter Brownies Recipe
Ingredients
Brownies
- 160 g oat flour I used GF
- 160 g golden caster sugar
- 2 tbsp cocoa
- 1 tbsp peanut hottie
- 4 tbsp sunflower oil
- 1 cup vanilla soy
- 150 g vegan chocolate I used Bourneville
- 1 tbsp peanut butter
- ½ tbsp peanut butter (to swirl)
Filling
- 1 cup icing sugar
- 2 tbsp butter
- 2 tbsp vanilla soy
- 1 tbsp peanut hottie
Icing
- 2 cups icing sugar
- 3 tbsp dairy free butter
- 2 tbsp non-dairy milk
- 1 tbsp cocoa powder
Instructions
Brownies

Preheat your oven to 180 degrees and line an oven friendly baking dish.

Melt your chocolate in a heatproof bowl over a pan of boiling water. Once chocolate has melted, stir in the tbsp of peanut butter until combined.

Sieve your flour cocoa and peanut hottie to ensure a smooth mixture. Once done, stir in the sugar until dry ingredients are fully combined.

Now stir in the melted chocolate mixture, oil, and vanilla soy milk until fully combined. Mixture should be quite thick.

Pour your mixture into your lined baking dish then swirl the ½ tbsp of peanut butter through the top layer. It doesn’t have to be stirred in or mixed.

Place on the middle shelf of the oven and bake for approximately 25 minutes.

When brownies are cooked, allow them to fully cool and set before icing.
Filling

Add the icing sugar, vegan butter, milk and peanut hottie to a mixing bowl.

If using your electric mixer, start at low speed, gradually increasing speed. Alternatively, I mixing by hand, mix slowly until perfectly smooth and thick.

It should be very thick, but still easily spreadable.
Icing – This is pretty such the same as the filling, just subbing the peanut hottie for cocoa powder.

Add the icing sugar, vegan butter, milk and cocoa powder to a mixing bowl.

If using your electric mixer, start at low speed, gradually increasing speed. Alternatively, I mixing by hand, mix slowly until perfectly smooth and thick.

It should be very thick, but still easily spreadable.
Assembly
-
Once the brownie batches have cooled, spread the filling over one batch.

Then carefully add the second batch on top. I trimmed the edges at this point to make sure the surface was even to spread my icing on.

Using a knife, spread an even layer of the chocolate icing over the top and sides of the layered brownies.
Serve and enjoy!

This brownie recipe has got me craving brownies. I like the idea of peanut buttercream in the middle of the brownie. This sounds so delicious!
I have tried just a few just vegan recipes for brownies and I had the same issue as you did, and it is very frustrating, once I did a recipe and it never got solid it was a total fail, like at least with the too dry ones I could still eat them lol. I never really thought about adding peanut butter in them, but this is a recipe I have to make. This would be the perfect thing to bring to my little sister’s graduation 🙂
