
I hadn’t tried gluten free gnocchi until I got some to add in as a bonus option when did my post ranking the best gluten free pastas but since then it’s become a pantry staple for nights where I need something quick. And before I continue, yes, I know gnocchi is not a pasta. That’s why I called it a bonus option. This garlic kale gnocchi recipe can be made in less than 10 minutes, so it’s perfect for a quick midweek lunch or dinner, it involves a bed of sautéed kale with a garlic, basil and kale dressing. A perfect light, fresh and zesty option as we (supposedly) enter the warmer months.
In terms of gluten free gnocchi, there are a lot that have egg in them. So, for reference, I used the Difatti Gluten Free Gnocchi for this recipe, just in case anyone is also both gluten free and vegan and needs a recommendation. That gnocchi comes in a plain variety, a tomato option and a spinach version.
Nutritional Information
This dish is very simple. But it is packed with kale, which I’m sure we all know by now has a lot going for it in the nutrition department. Overall, this recipe provides about a third of your daily calcium. Vitamin wise, it has over 100% of the RDA of vitamin K and two thirds of your daily vitamin A, and 90% of your daily vitamin C. The basic recipe as listed below only contains 8g of protein. So you may want to add some nuts or toasted seeds to your base to boost the protein a little and add some healthy fats.

Garlic Kale Gnocchi Recipe
A healthy, fresh garlic kale gnocchi recipe that can be prepped in less than 10 minutes and contains minimal fresh ingredients. A perfect healthy option when you’re short on time or for healthy lunch options.
This recipe is gluten free, dairy free, soy free, nut free and vegan.

Garlic Kale Gnocchi Recipe
Ingredients
- 1 250 g pack gluten free gnocchi
- 50 g fresh kale
- 2 cloves of garlic finely chopped
- ½ red onion finely chopped
Dressing
- 50 g kale
- 1 tbsp dried basil or 30g fresh basil
- Crack black pepper
- Pinch of cayenne pepper
- 2-3 tbsp olive oil
- Juice of ½ a lemon optional
- 4 tbsp unsweetened non-dairy milk
- 2 cloves garlic
Instructions

In a large skillet add a few sprays of fry spray over moderate heat. Add the garlic and red onion and sauté for two minutes, until the garlic just begins to brown.

Add half of the kale with a dash of water and toss to coat. When all of the kale is added to the pan, cover and sauté for 5 minutes. Stir and remove the lid for the final 2-3 minutes until most of the liquid has evaporated.

Meanwhile, start cooking the gnocchi as per packet instructions. It should only take about 4 minutes, so watch it carefully.

While the kale and gnocchi are cooking, add all of the dressing ingredients to a blender and mix until smooth.

When the kale and gnocchi are both cooked, add the gnocchi to the kale pan and lightly toss to combine. Then add the dressing and toss again before serving.

I’ve never had Gnocchi before and for lunch, I’ve been trying to put more of an effort in what I’m making and making it as a bit of time for me to cook so I think I will be trying this recipe in the next few weeks!

I can’t remember the last time I had gnocchi, so it’s long overdue! This looks like a great, simple recipe, but I’d probably swap the kale for spinach.

I will have to try this recipe, especially since I don’t like regular gnocchi. My Italian friend made it for me but it was not my favourite. I love that this is vegan, so surprised to see just a bit of plant-based milk is required. Sounds so simple and delicious.
I am a big fan of gnocchi, I’ve been making a creamy gnocchi and mushroom dish quite often recently so its one of my fave meals at the moment. I love the sound of it with garlic and kale, might have to give this one a try and mix it up from my usual one I make!
