

We use tortillas for so many things, an array of delicious Mexican dishes, a makeshift pizza base, lunch wraps, but they don’t get a lot of love when it comes to sweeter dishes. Sure, you can get breakfast wraps, but they’re usually not sweet. Compare that to the humble toast, eaten plain, with jams or marmalade, or a savoury alternative like avocado, a base for beans or eggs. I don’t see any reason why this other simple carbohydrate doesn’t deserve the same treatment. So, I decided to play around and make a sweet breakfast tortilla recipe.
Suggested Recipe: Mexican Tortilla Pizza
In this recipe, I’m treating the tortilla a bit like a crepe. Only without the fuss of having to make them. This tortilla is lightly fried in a sweet cinnamon butter and topped with whatever you’d fancy adding, just like a pancake. On mine, I have some warm berry compote, some greek style yoghurt and a little sprinkle of granola, but you could add any kind of spread/ preserve that you wanted, fill it with fresh fruit or go for a traditional crepe topping, lemon and sugar.
A note on the gluten free tortillas before the recipe begins:
Here, I’ve used one of the Genius ones, they have a very similar texture to Sainsbury’s own Free From tortillas. I don’t recommend the BFree ones for this recipe if you’re in the UK, they have a weird texture. And while the Old El Paso corn tortillas are some of the nicer ones when it comes to main dishes, they’re on the smaller side and a softer texture so will likely cook differently to the two brands listed above and aren’t ideal for this recipe.
Nutritional information
There isn’t a lot to say here as there are a lot of variables depending on your brand of tortilla and vegan butter. But as an example of how you could make it, I’m going to share a summary of the nutritional value of mine as shown in the photos.
As I used Greek style yoghurt, each serving contains 9g if protein and 7g of fibre. It also provides just over an eighth of the RDA of vitamin K and the same amount of omega 3.
Using a fortified vegan butter will likely provide a small amount of calcium, B12, vitamin D and potentially omega 3, depending on your brand of choice.

Sweet Breakfast Tortilla Recipe
A really quick and easy breakfast idea using a tortilla in a similar way to a crepe, ready in less than 5 minutes for you to top however you choose.
My chosen toppings contain nuts and soy, but the sweet tortilla base is gluten free, dairy free, nut free, soy free and vegan.

Sweet Breakfast Tortilla Recipe
Ingredients
- ½ tsp vegan butter
- Dash of vanilla extract
- Pinch of cinnamon
- 1 to rtilla
On mine:
- Alpro Greek Style Yoghurt
- Berry compote
- Sprinkle of granola
Instructions

Heat a large frying pan on low to medium heat. Add the vegan butter, once melted add the dash of vanilla and cinnamon (if using). Tilt your pan so that it spreads evenly across the base, then add your tortilla to the pan. Press down lightly using your spoon or spatula to make sure it’s fully touching the bottom of the pan, leave for about 20 seconds. Then flip and repeat for a further 15-20 seconds on the other side.

Remove from the heat, plate up and add your desired toppings. If you’re making more than one, the cinnamon butter mix should be enough to serve 2. For more than two, melt more butter after the second one. Don’t add more to the original mix.
