Mint Greens Recipe

Buttery greens in a fresh mint dressing, with the perfect blend of sweet and sour components.

Ingredients

  • 100 g tenderstem broccoli
  • 100 g asparagus
  • 50 g green beans
  • 100 g spinach
  • 3 cloves garlic thinly sliced
  • Generous amount of black pepper
  • 1 tsp vegan butter

Dressing

  • 2 tbsp olive oil
  • 1 tbsp white wine vinegar
  • 1 tbsp tamari
  • Juice of half a lime
  • 1 tsp maple syrup
  • 1 cup packed mint leaves washed

Instructions

  1. Heat a large frying pan on low - medium heat. Once hot, add the vegan butter and wait for it to melt. Lightly tilt your pan to ensure it has spread evenly across the base of the pan.
  2. Add the garlic and cook for one minute, stirring often. Then add the black pepper, broccoli, asparagus and green beans. Increase the heat to medium and cook for 4-5 minutes, stirring regularly.
  3. Once all of the vegetables are cooked, add the spinach and cook for a minute or so until it has fully wilted, stirring constantly.

Dressing

  1. While the greens are cooking, make the dressing.
  2. Wash your mint then place it in a blender. Don’t dry it off first. Add all remaining dressing ingredients and blend until fully combined.
  3. Once the greens are cooked, put them in a bowl and toss them in your minty dressing.

Serve and enjoy!
