Ingredients
100gtenderstem broccoli
100gasparagus
50ggreen beans
100gspinach
3clovesgarlicthinly sliced
Generous amount of black pepper
1tspvegan butter
Dressing
2tbspolive oil
1tbspwhite wine vinegar
1tbsptamari
Juice of half a lime
1tspmaple syrup
1cuppacked mint leaveswashed
Instructions
Heat a large frying pan on low - medium heat. Once hot, add the vegan butter and wait for it to melt. Lightly tilt your pan to ensure it has spread evenly across the base of the pan.
Add the garlic and cook for one minute, stirring often. Then add the black pepper, broccoli, asparagus and green beans. Increase the heat to medium and cook for 4-5 minutes, stirring regularly.
Once all of the vegetables are cooked, add the spinach and cook for a minute or so until it has fully wilted, stirring constantly.
Dressing
While the greens are cooking, make the dressing.
Wash your mint then place it in a blender. Don’t dry it off first. Add all remaining dressing ingredients and blend until fully combined.
Once the greens are cooked, put them in a bowl and toss them in your minty dressing.
