Due to the pecans and flax, this recipe is high fat, but it’s full of omegas and healthy fats and still low in saturated fat. Each serving contains the full recommended daily amount of omega 3.
How to store and does it keep?
You can store any leftovers in an airtight container in the fridge for up to three days. This dish can be served cold, or preheat your oven to 170c and place it on the middle shelf for 12-15 minutes to reheat. Try to avoid microwaving this dish to avoid your ‘crisp’ getting soggy.
Substitutions
You can substitute the pecans for any other nut of your choice if you’re not a fan. Walnuts or almonds would both work well in a dish like this. If you have a nut allergy or want to skip the nuts completely, you could add some pumpkin seeds if you wish to keep the crunch/ variation in texture, or simply add the equivalent weight in extra oats if you don’t want to keep the dish simple.

Healthy Peach Crisp Recipe
Ingredients
- 2 peaches pitted and thinly sliced
- ⅓ cup GF oats
- ¼ cup ground/milled flaxseed
- 1 tbsp brown sugar
- 20 g pecans chopped
- 1 tbsp vegan butter
- Pinch of ground cinnamon optional
Instructions

Pre-heat the oven to 175°c.

Spread the sliced peaches evenly on the bottom of a baking dish.

In a medium sized bowl, combine the oats, pecans, flax, sugar and cinnamon, then work the butter in until the mixture has butter worked throughout it evenly.

Sprinkle the oats mixture over the peaches evenly.

Bake for 25-30 minutes until the oats brown and the peaches start to bubble.
