
Being able to grab a quick pastry for breakfast was something I really missed when I first became vegan, even more so when I could no longer eat gluten. But it’s really easy to make your own, especially something as simple as a peach tart. This peach tart recipe only requires about 5 minutes prep and a handful of ingredients to make a delicious breakfast, perfect for a lazy Sunday morning.

Each serving contains 221 calories, 3.5g of fibre and 2.5g of protein. You’ll also get 10% of the recommended daily amount of vitamin C per tart.
Substitutions
This recipe is obviously gluten free and uses gluten free pastry. For anyone who doesn’t require GF, feel free to swap for a sheet of regular puff pastry.
And I’ve used almond milk, but swap for any non-dairy milk of your choosing.
How to store and does it keep?
They’re best served fresh and warm, but they’ll keep for a few days stored in an airtight container. Eat them cold, or microwave for 15-20 seconds to slightly warm them and freshen the pastry slightly.

Easy gluten free vegan peach tarts recipe, perfect for a lazy weekend breakfast.
This recipe is gluten free, dairy free, soy free and vegan. It can be nut free depending on your choice of non-dairy milk.

GF Vegan Peach Tarts Recipe
Ingredients
- 1 sheet gluten free puff pastry
- 5 ripe peaches
- 3 tsp caster sugar
- Almond milk for brushing
- Icing sugar to serve
Instructions

Preheat oven to 200c

Remove pastry sheet from fridge and set aside for 10-15 minutes until it becomes room temperature.

Slice peaches into medium thickness strips and cut the pastry sheet into 6 equal sized squares.

Lay the peaches across each of the pastry squares, diagonally, leaving a small border for the pastry to puff.

Sprinkle the caster sugar over your peaches and brush the edges of your pastry with your non-dairy milk.

Place on a sheet of baking paper on a tray and bake for 18 minutes, or until the pastry has puffed and is golden. Sprinkle with icing sugar before serving.
