
I know there’s been a massive increase in people baking over the last week. However, I also know that flour is the new pasta and it’s almost impossible to get hold of. Thankfully for you, I’m a fan of baking with oat flour so you can smugly bake these recipes at home without having to stress about food shortages. I thought I’d share some easy vegan baking recipes in this post that you can potentially make during lockdown. They all have simple ingredients lists and aren’t too complicated to make, so they’re great options for people attempting vegan baking for the first time or possibly looking for lockdown baking ideas for kids.
Oh, and I’m sorry if you’re having issues sourcing oats where you are, I haven’t seen that where I am. I tried!
Every single one of these recipes is vegan and gluten free. Each post is allergy labelled within the recipe for other common allergens like nuts and soy.
10 Easy Vegan Baking Recipes
1. The Most Simple Cookies You’ll Ever Bake
This one screams bake with kids to me, they’re simple banana oat cookies, and they’re not that bad for you either if you’re looking for slightly healthier options.
I made these banana oat cookies with a Christmas twist too, I know the current season is far from festive, but this recipe might give you an idea of things to potentially add in if you don’t want them plain!

2. No Bake Millionaire’s Shortbread/ Caramel Slices
A nut and oat base with a date caramel layer, all topped with chocolate.

3. Applesauce Oatmeal Raisin Cookies
Like the sound of the first recipe but don’t want to use/ don’t like bananas? You know what, I hate bananas and got sick of seeing them in every vegan recipe, so I decided to start playing with applesauce instead and came up with these.

4. Frozen Granola Clusters
Okay, I know this isn’t technically baking (unless you want to make your own granola too) but this recipe is another one that’s good to make with kids. Although that could get messy, these ones are fun and a little different from everything else on this list.

5. Mini Baked Doughnut Muffins
I didn’t know what to call these at the time and, honestly, I still don’t. But they’re a baked in a doughnut tin but have more of a cake/ muffin texture.

6. Orange Breakfast Muffins
Another one that’s oat flour based, with some added hazelnuts and some orange juice and zest. This one is refined sugar free, other than the (optional) icing, so it’s another great option for a slightly healthier bake with kids.

7. Peanut Butter Cookies
These were one of my favourites from last year’s Recipe A Day May. This an easy bake with kids, but not a healthy one. These ones taste buttery and sugary, the perfect level of chewy that makes a really great cookie (if I do say so myself).

8. Strawberry White Chocolate Blondies
It’s with a very heavy heart that I bring you one of my favourite Wimbledon inspired recipes from last year. Vegan white chocolate and a homemade strawberry jam (you could use store bought) in an oat flour based blondies recipe.

9. Peanut Butter Brownies
I made a double stacked batch of these and iced them as my mum’s birthday cake last year. If you’re a regular baker you’ll likely already have all of these ingredients other than maybe the powdered peanut butter. But if you can get your hands on some and want to treat yourself, this is the one.

10. Vegan Nutella Loaf
If you have/ can get some vegan nutella, or regular nutella if you don’t need it to be DF, this loaf is such a simple one to make in terms of ingredients.

These all look super yummy! Have finally been able to get my hands on some flour so now I can have a goo at baking some of these yummy treats. I think I will be having a go at that caramel shortbread first, as that just looks delicious!
We have just made some banana muffins with cinnamon and ginger, but used egg; so will have t find a way of making this recipe vegan!

These all look incredible. I was instantly drawn to the strawberry white chocolate blondies. That’s everything I love most in a single treat – what’s not to love? I think baking is a great positive way to pass the time right now, and this post has me thinking that I need to join in on this trend!

I don’t think I ever seen oat flour sold locally, but I do live in a small town and it’s hard to get options here in general, luckily I do have 2 big bags of flour. The peanut butter cookies are probably going to be my first try. I actually have not baked yet, but I have used flour to make flatbreads on the stove.

Anything with orange or peanut butter in is an instant win in our household. And you’re right about flour being the new pasta, I haven’t seen any for WEEKS although I must admit I haven’t looked for oat flour, that’s a great tip. That said, I did manage to get some eggs yesterday so it looks like we’ll be baking at the weekend and this post couldn’t have come at a better time, thank you 🙂 xx
