
Do you ever look at what you’ve been eating and realise that you’re going through a serious phase with something? I came to that realisation mid making these cookies. Ever since I made my peanut choc chip pancakes, peanut butter has been my vibe. Sorry if you’re getting bored of it, I’m sure I’ll become obsessed with something new soon. But for now, I’m sharing these vegan peanut cookies. I’m writing this introduction while they’re chilling (you’ll see soon) and if for whatever reason they don’t turn out; I’m still sharing the cookie dough recipe because I’ve never tasted anything more heavenly in my life. And yes, that does mean I lick the spoon when I’m done…don’t pretend you don’t.
Ingredient Choices
This recipe is not healthy in the slightest, I’m putting that out there before we get to the ingredients list. They’re buttery and sugary, which makes them absolutely delicious. The one slightly healthy thing about them is the flour; I’ve opted for GF oat flout today. I know I use oat flour a lot, but it’s the king of GF flours. It works in just about every recipe, it doesn’t taste earthy like some grain flours do and obviously isn’t processed like bleached white flour blends. If you want to sub the oat flour for plain white flour, you absolutely can.
Easy Bake
If you’re looking for something to bake with kids, this one is great as it’s as simple as adding things to a bowl and mixing and they only take 10 minutes to bake. They do have an hour chill time, which helps the ingredients bind and gives you a better end texture, but they’ll still work if you wish to bake them straight away.
I chose to add a square of chocolate to the top of my cookies to melt in the oven rather than using choc chips, but you can use the same amount of chocolate and use chips instead. Alternatively, you can eat them without the chocolate as plain peanut cookies.
For reference, these cookies are crisp on the outside and chewy in the centre. If you like crunchier cookies, bake for an extra few minutes.

GF Vegan Peanut Cookies
This recipe is gluten free, dairy free, soy free and vegan. If you wish to make them nut free, sub the peanut butter for some wow butter*.

GF Vegan Peanut Cookies
Ingredients
- ¼ cup vegan butter
- ¼ cup peanut butter
- ¼ cup white caster sugar
- ½ cup brown sugar
- 3 tbsp aquafaba
- 1 ¼ cups GF oat flour
- ½ tsp corn starch
- ½ tsp baking powder
- 12 squares dark chocolate or the equal weight in choc chips.
Instructions

Cream together the butter, peanut butter, sugars, and aquafaba.

Mix in the flour, corn starch, and baking soda. Mix until incorporated. The mixture will be crumbly.

Mix in the chocolate chips, if using.

Roll the dough into a ball. Refrigerate in a sealed container and chill for at least an hour (recommended but not essential).

Divided the dough into 12 balls for large cookies, place a square of chocolate on top of each cookie.

Bake on a greaseproof paper baking sheet at 350F/ 175C for 10 minutes.

Allow to cool for 10 minutes before serving.
Serve and enjoy!

I made a mix of chocolate topped cookies and plain ones. The plain ones are just under 150kcals each, which is a lot less than I was expecting considering all the butter and sugar. How would you guys make these, plain, topped or choc chips…or just the dough…?

YUMM to the Y! These sound and look yummy, esp as I am gluten-free 😉 I’m wondering if coconut sugar would be a suitable alternative for the sugars in the recipe, as that is the sugar I use. I’ll let you know if t works if I try it…

I really want to try oat flour! I’ve used coconut flour & almond flour before, and neither of them have given my baked goods the desired consistency–at least for me. I’m going to have to try these out soon xx
