
Hey everyone, in my February Goals post I said that one of my goals was to get my eating habits back on track to feel a little more like myself again. So, I thought I’d show you what I eat in a usual day.
Obviously, this is one day, not every day and I like to mix my diet up quite a bit so two days rarely look the same. As many of you will know, I follow a vegan diet. I also try to stick to a gluten free diet as I have a gluten sensitivity. I don’t have an outright allergy, so sometimes things are too tempting to turn down (as you’re about to see).
This particular day I was out for quite a long time and had a lot on so these are all either grabbed on the go or easy to prepare.
Breakfast
Blueberry Chia Pudding
The day I chose to do this post was the day I was prepping for my overnight breakfast ideas post, so I had one of the dishes I’d prepped for that. It set me up well for the day as it’s full of nutrients and it was a bonus that it took no time to prepare.

‘Lunch’
Pretzel and Snack Tray

I usually eat my breakfast quite late, so I tend to skip lunch in favour of an afternoon snack or two. As I was out and about today, I grabbed a couple of bits from M&S. I think the Marks & Spencer pretzels are the perfect pretzel. If I ever see one on the bakery counter when I’m there, I have to get one. I’ll suffer the bloat later. This one didn’t disappoint.

I also picked up this turmeric snack tray, I’d never tried this one before and I couldn’t decide if I liked it or not. The chickpeas were good but the seasoning on the cashews left something to be desired. I also wasn’t sure how I felt about the sweetness of the goji berries combined with the turmeric.
Dinner
Cannellini Bean Casserole
When I haven’t got much time, I usually eat something like a stir fry or a quick casserole like this one, depending on the vegetables I have in the fridge. Today I had lots of carrots and peppers, so I decided to go down the casserole route. This one consists of red onion, carrots, red pepper, chopped tomatoes and cannellini beans for some added protein.

I have been trying to incorporate chia seeds into my regular diet. I usually have them with cold flavoured milk but the pudding is also a good option.
I’d never thought about blueberry chia pudding before, that sounds insane! Also, I feel like I might end up in the food court of M&S today scouting out those pretzels Major food envy right now!! X

Love that chia pudding. I am trying to go keto for my RA and I have seen chia pudding before.
Girl! I need to do this too! My life is so busy and I used to get things cut and prepped for the next day, which really helped me in the weight category. I love overnight oats! It takes time to get everything prepped, but it is so lovely to wake up and not have to make anything! Thanks for all the suggestions. Not sure how I would have felt about the snack you had either.
