
Hey guys, I know this is my third recipe post in as many weeks, but it’s my favourite meal to experiment with. Today’s offerings don’t look quite so appetising. It’s hard to make something look good when you’ve kept it in a jar overnight then tipped it into a bowl. With that in mind, I promise they taste better than they look, especially number three.
All of these recipes are gluten free and vegan. None of them take more than five minutes to prep. They ideally should be kept in the fridge overnight but anything over three hours should be fine.
All recipes are for one serving.
Overnight Chocolate Oats

We’ve already spoken about how I’m not that keen on regular oats this month. But I love overnight oats. This is the quickest and easiest of all of the recipes in this post and it’s always yummy. Who doesn’t love chocolate for breakfast?
Ingredients:
- Half a cup of oats (GF if necessary)
- ½ cup almond milk
- 1 tbsp raw cacao (cocoa powder is fine)
- Sweetener to taste
Method:
Add all ingredients to a jar and stir. Place in fridge overnight. It’s that simple. The chocolate mixes slightly better if you add the cacao to the oats before the liquid ingredients.
Blueberry Chia Pudding

I love chia pudding for breakfast. This one is more of a summery recipe but it’s a great way to get in your daily omega three and some extra vitamins without having to think about it.
Ingredients:
- 2 tbsp chia seeds
- Half a cup of frozen blueberries
- A third of a cup almond milk
- Extra sweetener if required
Method:
- Place chia seeds in a jar
- Blend the blueberries and almond milk in a blender, like a smoothie.
- Pour the ‘smoothie’ mix into the jar then stir to combine.
- Place in the fridge overnight to set.
Peanut Protein Pudding

This looks gross, I know. But don’t be fooled, the texture is really creamy, and it tastes delicious. This one is great for someone on the go or just to have around as a post-workout snack. It contains about 20g of protein so it’s great for someone trying to up their intake.
Ingredients:
- I heaped tbsp protein powder
- 1 tbsp chia seeds
- 2 tbsp oats
- 1 heaped tsp peanut butter
- Half a cup dairy free milk
- 2 squares of Trek Peanut Power Bar broken into smaller pieces (optional but recommended)
Method:
- Add all the dry ingredients to a jar and stir to combine.
- Next add the milk and stir thoroughly, make sure none of the protein powder is sticking to the bottom of the jar.
- Then stir in the peanut butter.
- Place in the fridge overnight to set.

The peanut overnight recipe looks amazing! I’ve yet to try overnight oats but this looks fab.
This would be perfect for me as I can’t get up early enough to eat a proper breakfast! Might give the chocolaty one a try! x

I think I will try the chia seeds pudding. Blueberries aren’t local to my city and I am not keen on eating imported exotic fruits, but I think I could replace them with strawberries which are currently in season here and local.
Blueberry Chia Pudding is the best! I make it all the time for mornings on the go because its so quick and easy too do the night before xx
Ooh yum, breakfast is my favourite meal of the day and I pretty much always have oats. Really want to try the chocolate one! I did overnight oats with apricot and nuts and it was delicious!
