Yesterday I said I thought that everyone either ate something light for their Christmas day breakfast or went all out and shared a very indulgent stack of mint chocolate pancakes. Today’s post is the recipe for those of you in the other camp. These mint chocolate overnight oats are still creamy and indulgent, but a much lighter option for those not wanting something too heavy, but a good mix of protein sources and healthy fats mean it’s still filling enough to keep you going too.
These oats are really easy to make the night before, and it means you don’t have to make a mess in your kitchen before you need to prepare the main event. Simpe, fuss free but still Christmassy.
Nutritional Information
I don’t want to try and convince you that having chocolate for breakfast is really healthy, but this recipe does have quite a lot going for it in terms of nutrition. It contains 18g of protein, and 14g of fibre (56% RDA), and the chia seeds provide plant based omega 3.
Vitamin & Mineral Content
Chia seeds are very high in vitamin K, so this recipe alone provides 133% of the RDA. If you use fortified non-dairy items, it will provide 60% of the recommended daily amount of calcium. I used soy milk for mine, which provides B2, but that will vary depending on your milk of choice, almond is a good source of vitamin E.
This recipe is also a source of several other minerals, such as iron, magnesium and potassium.

Mint Chocolate Overnight Oats Recipe
A rich and creamy overnight oats recipe full of festive flavour with a healthy balance of carbs, fat and protein to keep you fuller and satisfied for longer.
This recipe is gluten free, dairy free and vegan. It can be nut and soy free depending on your non-dairy alternative choices.

Mint Chocolate Overnight Oats Recipe
Ingredients
Oats
- ⅓ cup oats
- 2 tsps choc shot mint
- 2 heaped tbsp vegan Greek yogurt
- 1 tbsp cocoa powder
- ⅓ cup non-dairy milk
Chia
- 1 ½ tbsp chia seeds
- ⅓ cup non-dairy milk
- ½ tsp peppermint extract
- Few drops green food colouring
Instructions
-
Mix all of the ingredients from the chia section together in a small bowl/ dish. Add the green food colouring until you get to a minty shade that you like. Set aside for 10 minutes to thicken.
-
While the chia mix is setting, mix all of the oat ingredients together in a jar/ container that you want to leave them in overnight. Once the chia mix has thickened slightly but not fully set, pour that into the jar and leave in the fridge to set overnight or for at least 4 hours.
-
Top with some nuts or granola the following morning for a little extra crunch.
Serve and enjoy!

Do you like the sound of this overnight recipe? Are you a light or heavy Christmas breakfast kind of person?
Until next time,
Sophie
I love mint chocolates and overnight oats so this combo sounds like heaven to me, Sophie! And I honestly think that having chocolate for breakfast is a great idea. Thanks for the inspiration! Yum!
I love the sound of this! We usually have a big, over-indulgent, Christmas breakfast, but I could see myself eating this over the festive period. One question though, what is ‘ choc shot mint’? And where do you buy yours?
Christmas pancakes are the way forward I think! Choc shot is a liquid hot chocolate/ chocolate sauce. I got my last one from Ocado but I’ve picked some up from Sainsbury’s before and Holland & Barrett usually have some too!
I love the sound of this and the pancakes from yesterday. I would definitely be happy with either for a Christmas morning breakfast! I did mention in the previous post comments that I do usually go all out from the start, but maybe it is a mistake as I do then struggle with the early afternoon dinner hehe. I love mint chocolate so I know this would be something I would very much enjoy. xx
I love the combination of chocolate, mint and oats! Sounds amazing and healthy!
Amazing recipe! This looks so cool and it’s perfect for the festive season! Thank you for sharing this!
I’m totally making this!! The funny thing is that I’m drinking some chocolate mint tea while I’m reading this! Haha!!
