Ingredient Choices and Substitutions
It’s very important that your peach is extremely ripe, you want it to be as soft and juicy as possible to get the smoothest texture for your dressing. If you’re questioning whether your peach borderline over ripe, that’s the perfect level of ripeness for this dish.
You can swap your maple syrup for any other liquid sweetener of your choice, like agave or honey (if not vegan). Something like date syrup would also work, but that will have a dramatic impact on the colour of your dressing.
Do I need to peel my peach?
That’s up to you. I didn’t, and the dressing was still very smooth, but as you can see, there are some visible blended specs of peach skin in the dressing. If you want your dressing to be one uniform colour, you can peel it, but the skin helps to give the dressing a richer colour.
Can I use tinned peaches?
Tinned peaches aren’t ideal. The texture is different to fresh peaches, so your dressing won’t have the same consistency, and they’re often canned in some sort of syrup or sugar water, so the flavours will be off balance too.
How to store and keep
Due to the fresh peaches in this recipe, a batch won’t last forever, but the acidity of the lemon juice will preserve it for a small window of time if you have any leftovers.
Store in an airtight jar/ bottle and keep refrigerated and you can use it for up to 5-7 days to add to your salads throughout the week.

Peach Salad Dressing Recipe
Ingredients
- 1 ripe peach
- Juice of half a lemon
- 2 tbsp olive oil
- 1 tbsp maple syrup
- Pinch of salt
Instructions

Add all ingredients to a blender and blend until smooth. I opted to leave my fuzzy peach skin on, it still blends smooth! The skin helps to give the dressing its colour and adds some vibrancy to your bowl, but you can remove it if you prefer.

Add to your salad and mix prior to serving.
