
Today you’re being blessed with two versions of this recipe. Earlier this year I went through a little phase of mango breakfast recipes, which then gave me the idea to make a tropical overnight breakfast recipe. I made it, it involved chia seeds – but I know a lot of people aren’t keen on chia recipes so I decided to make another one with similar flavours without a chia layer, and with some pineapple cashew cream instead.
2 Tropical Overnight Breakfast Recipes
Option one contains an oat layer, topped with a tropical fruit chia smoothie layer, and some more tropical smoothie fruits on top. The second option contains a pineapple cashew cream, an oat layer and some dried mango, so hopefully, there’s an option to suit everyone.

Overnight Tropical Chia Smoothie Recipe
Nutritional Information
This recipe provides 10g of both protein and fibre per serving. The fruits are a great source of vitamins with this recipe providing the full recommended amount of vitamin C, and a third of your daily B1 and B6. If you’re using fortified non-dairy products, this recipe will also provide a third of the daily recommended amount of B12 and vitamin D, and 50% of your daily calcium as chia seeds are a source too. The chia seeds in this recipe also provide the full daily amount of vitamin K and omega 3.

Overnight Tropical Chia Smoothie Recipe
An overnight tropical chia breakfast recipe made with a tropical smoothie mix and creamy oat recipe
Ingredients
Chia layer
- ½ cup tropical Smoothie mix
- ½ cup non-dairy milk
- 1.5 tbsp chia seeds
Oat layer
- 1/3 cup GF oats
- 100 g Alpro Greek style yoghurt
- ½ cup tropical smoothie mix
Instructions

Blend together the tropical smoothie mix from the chia layer with the almond milk and stir in the chia seeds. Set aside for the next 15-20 minutes while you make the other layers.

Add the ½ cup of tropical smoothie mix from the oat layer recipe to a small saucepan with a dash of water. Leave on a low heat for around 15 minutes until the mix has melted and the fruits are starting to soften and break apart. You don’t want to reduce them down fully to make a compote texture, but when they’re breaking apart and the pan has a liquid forming, remove the fruit from the heat.

Drain the fruit, keeping the liquid and set the fruit aside. Mix the liquid in with the Alpro yoghurt and oats. Stir to thoroughly combine, then transfer that layer to the bottom of your jar to use as a base. Add the set chia pudding layer on top of the oat layer, then add the fruit after it’s had time to cool.

Leave in the fridge overnight or for a few hours until you’re ready to eat it.
Serve and enjoy!
Overnight Creamy Tropical Jar Recipe
Nutritional Information
As this recipe contains nuts, and has the Alpro Greek Style in, it’s slightly high in protein than the average breakfast jar, coming in at 16g per serving. Per serving this recipe provides 8g of fibre, 100% of your daily vitamin C, 20% of your daily iron and around 15% of vitamins B1, B6 and K.
This recipe I dairy free, gluten free and vegan. It does contain soy and nuts, but you could switch the Greek style yoghurt for some coconut yoghurt to provide a soy free option.

Overnight Creamy Tropical Jar Recipe
An alternative creamy tropical overnight recipe with a tropical oat layer and pineapple cashew cream.
Ingredients
Creamy Cashew Layer
- ¼ cup cashews pre-soaked overnight, or at least 4 hours
- 1 thick slice pineapple roughly chopped
Oat layer
- ⅓ cup gluten free oats
- 100 g Alpro Greek style
- 3 tbsp tropical juice
- Dried mango to serve
Instructions

Mix together all of the ingredients from the oat layer section in a small bow. Stir thoroughly to make sure the oats are evenly covered. Set aside for 5-10 minutes while you make the cashew layer.

Blend together your pre-soaked cashews with the slice of pineapple until fully smooth and creamy. The water content in the pineapple should provide enough liquid to keep the mix moving, but you may need to scrape down/ stir in mix half way depending on your blender.

Spoon the cashew cream into the bottom of your jar/ container of choice and top with the oat layer. Leave in the fridge overnight or for a few hours until you’re ready to eat it. Top with some dried mango before serving
Serve and enjoy!

They both sound great, I’m not a huge fan of chia seeds and don’t have them very often but that said I don’t mind them. I would love to be more creative with my breakfast, I either don’t eat it until like 11am because I just start work and don’t give myself the time to eat, or I’ll quickly shove some bread into the toaster to eat really quickly, so the good thing about these kind of recipes is that you can make them in the evening for the next day.

Both of these look amazing and would be perfect for breakfast this time of year, nice and light and fruity. The Chia one would be my first choice but I’d love either of them tbh!
