

If you saw my s’mores granola recipe a couple of days ago, you’ll already know that 1) I’m going through a serious s’mores phase and 2) I made s’mores cookies! Now this a more of an inspired by S’mores cookies recipe, rather than a traditional S’mores cookie, but you still have that gooey chewiness from the melted marshmallows.Â
For those who are unaware, a traditional S’mores cookie is more of a sandwich, you have the melted marshmallows as a filler between two biscuity layers. As you can see from the photos, that’s not what I decided to do today. I made regular cookies with s’mores flavours/ ingredients and I was hoping that the melted marshmallows in the cookie dough would make the cookies themselves chewier and improve the overall texture. It worked! I’m not sure if you can see in the photos, but there are a few tiny flecks of melted marshmallows in them, that adds a hint of the chewiness you get in a Rice Krispie bar. Â


I used the M&S plant kitchen marshmallows for these, so far I think they are the best vegan marshmallows I found to date. The texture is softer than a lot of other brands which makes them chewier, more like the real thing and less dry. Â

Each cookie contains 145 calories and provides 2.4g of protein and 1.2g of fibre, 7.4g of fat, 2.4g of saturated fat. Â

Vegan S’mores Cookies RecipeÂ
A deliciously chewy s’mores inspired cookies recipe with gooey marshmallows and chocolate chips.Â
This recipe is gluten free, dairy free, soy free and vegan. It does contain nuts. Â

Vegan S’mores Cookies Recipe
Ingredients
- 1 cup GF oat flour
- ½ cup golden caster sugar
- ¼ cup vegan butter
- ¼ cup peanut butter
- ¼ cup chocolate chips
- 50 g vegan marshmallows
Instructions

Preheat oven to 180°c and line a baking tray with greaseproof paper

Chop up half of your marshmallows to be roughly the size of mini marshmallows.

Add the sugar, nut butter and vegan butter to a food processor and mix until a dough ball starts to form.

Then add the oat flour and chocolate chips and continue to mix until the dough rolls into a giant cookie dough ball. Add in the chopped marshmallows and pulse a few times until they’re combined in the dough.

Divide into 12 equal sized portions and shape into cookies, as you’re shaping them, press the remaining marshmallows into the dough.

Place each cookie on the lined baking tray. Cook for approximately 12 minutes. Allow to cool before serving.
Serve and enjoy!
