
Something that was really important to me when I was planning this series of Recipe A Day May was that I had a good balance of meals. I wanted to make sure I had an almost equal amount of mains, breakfasts, desserts, and snacks. Snacks turned out to be harder than anticipated. A lot of the time something would start as a snack, then become a sweet dessert option. So, I got thinking about what I eat when I want a snack. And it turns out that I’m really boring. I eat fruit, nuts, Nakd bars and nut/ seed butter on crackers. That’s pretty much it. I was left with no choice other than to make a combination of most of the things I like to snack on. And I came up with this pumpkin seed butter cups recipe.
Simple & Healthy Ingredients
The outside of these cups is basically a Nakd bar recipe without any additional flavours. It’s almonds and dates, naturally sweet, a little bit of protein and still substantial enough to keep you going. You all know that I became obsessed with pumpkin seed butter earlier this year, so that was my obvious choice for the filling.
Pumpkin Seed Butter?
If pumpkin seeds or green butters aren’t your thing (seriously though, try it), you could easily sub that part out for another nut or seed butter of choice.
I’d recommend leaving some chill time for these so the butter can firm up a little in the middle, but that’s not 100% necessary. They do hold up better if they’ve been in the fridge, but you only really need 10 minutes to blend them up and assemble them if you’re tight on time. I sprinkled mine with a little granola to finish them off, but you can leave them plain or add some extra nuts or seeds if you’d prefer.
I made 6 with fairly thick cups, but you could probably stretch this to 8 if you wanted more. You’ll need ½ tbsp nut or seed butter per cup, so adapt the recipe as required.
This recipe is dairy free, gluten free, soy free and vegan.

Vegan Pumpkin Seed Butter Cups (GF)
An easy snack option that can be made in less than 10 minutes. These pumpkin seed butter cups are full of healthy fats and natural sugars, making them tasty but still healthy.
Ingredients
- 1 cup pitted dates
- ½ cup almonds
- 3 tbsp pumpkin seed butter more if you’re making extra cups
- 20 g granola
Instructions

Add almonds and dates to a food processor and combine until mixture is sticky and easily rolled into balls.

Remove mixture and shape into 6-8 balls. Add each ball to a cupcake tin then press them out from the centre to form cups.

Once cups are formed, add ½ tbsp pumpkin seed butter (or other butter or choice) to the centre of the cups.

Sprinkle a pinch of granola over each cup before placing in the fridge to chill and set for an hour. Chilling time is optional but recommended. Keep refrigerated and consume within 7 days.

I love Nakd bars so I’d love to try these! I’ve never actually tasted anything pumpkin flavour, believe it or not! I’m 26 years old and don’t know what a pumpkin tastes like!

I’ve not tried pumpkin seed butter before, so intrigued to try it and see what it’s like. These do seem very quick and simple to make. I feel like I’m quite boring when it comes to snacks, I just eat fruit or crackers.. or both together as I love grapes on crackers haha.
